    Gluten-free Hearty Harvest Rice

    Celiac.com 01/03/2017 - Here's a hearty, nutritious rice dish that's sure to bring smiles and mutterings of epicurean satisfaction from family and guests. It's pretty versatile, so add or subtract ingredients as you like, just be sure to account for any extra liquid you might need if you add, say, quinoa to the mix. Extra vegetables should not require too much adjustment.

    Ingredients:

    • 2 cups chicken broth
    • 3 onions, sliced into ½-inch wedges
    • 1 cup fresh sliced mushrooms
    • ½ cup slivered almonds, toasted
    • ½ cup uncooked brown rice
    • ½ cup uncooked wild rice
    • ½ cup frozen peas
    • ½ cup dried cranberries
    • 3 tablespoons butter
    • 3 onions, sliced into wedges
    • 1 tablespoon brown sugar
    • ½ teaspoon orange zest
    • salt and pepper to taste

    Directions:
    Mix broth, brown rice, and wild rice in a medium saucepan, and bring to boil.

    Reduce heat to low, cover, and simmer 45 minutes, until rice is tender and broth is absorbed.

    In medium skillet, melt butter over medium-high heat.

    Add onions, and sauté until butter is absorbed and onions are translucent and soft.

    Add brown sugar and stir until dissolved.

    Reduce heat, and cook onions for another 15-20 minutes or so, until they are caramelized.

    Stir cranberries, peas, and mushrooms into the skillet.

    Cover, and cook 10 minutes or until peas are done, and berries start to swell.

    Stir in almonds and orange zest, then fold the mixture into the cooked rice.

    Salt and pepper to taste.

    For the glaze:
    2 ounces favorite oil
    1 large onion, chopped
    4 cloves garlic, chopped
    1 chipotle pepper, chopped (usually find dried in produce section or canned
    in Mexican section, med. hot)

    1 tablespoon cracked black pepper
    2 tablespoon Worcestershire sauce
    2 cups orange juice
    2 cups Gluten-free Casein-free barbecue sauce

    2 lemons juiced
    Kosher salt to taste
    For the pork loin:
    3 pounds pork loin
    4 tablespoons olive oil
    2 tablespoons kosher salt
    2 tablespoons cracked black pepper
    Preheat oven to 350 degrees.

    1 pound lean ground beef
    1 pound lean ground pork (you can also add ground veal if you wish)
    2 minced onions
    3 minced garlic cloves
    Approximately 1 cup of gluten-free chicken broth
    1 teaspoon gluten-free chicken granules
    1 teaspoon gluten-free dry beef bouillon
    1 ½ teaspoon paprika
    1 Tablespoon dry parsley
    1 teaspoon black pepper
    1 teaspoon salt
    1 ½ mixed fines herbs
    ¼ teaspoon ground clove
    Approximately 4-5 potatoes, boiled or baked, and mashed. Brown the meat with the onions and garlic, add all the other ingredients except the potatoes. Let simmer about one hour and add the potatoes.

    1 cut up chicken
    7 oz. turkey sausage
    1 cup chopped onions
    1 cup chopped bell pepper
    ¼ cup parsley
    12 cups water
    5 tablespoons roux
    3 tablespoons cooking oil
    Season salt (to taste)
    Black pepper (to taste)
    1 cup gluten free flour
    Directions:
    Roux: Place gluten free flour into cast iron skillet and cook over medium heat. Stir constantly, until flour is a dark brown.
