So today I started some experimenting, I used what I learned from my protein sticky dough experiment about psyliumm husk gelling with warm liquids and applying it with a gluten free flour mixture (almond/coconut/Swerve/guar gum )then taking the hot mix and cooling then adding in the eggs and baking powder akin to a choux pastry dough I can get amazing rise and super puffy results. So needing to find a keto brownie that would be easy to digest I found a recipe and modified it to fit my needs. These are best served hot so leftovers are best heated before serving. So my health is quite bad, the GI upset has leveled out after 4 weeks the bleeding stopped with vitamin K and calcium enriched almond milk daily to encourage clotting. My diet has been mostly meat, vegan cheese, collagen and almond milk drinks, and snacking on pork rinds. I recent introduced some almond yogurt to try and populate my gut bacteria and kale for vitamins. So going over some classics I have not had in years and sticking with a keto/Plaleo diet I decided I missed fish sticks. Found a few recipes and modified them and gave myself options. For the pork rinds I suggest either BaconHeir Pork Panko and season to taste to choose your favorite seasoned ones and pulse in a food processor for panko. I personally tried with Epic for more crunch, and 4505 is smoother better tasting. Alternatively you can use NutCrumbs or seasoned almond meal. 3-3.5oSecret Sauce

To Whomever Might Read This, This is metaphor only …not intended to diagnosis or treat anyone but to educate…. This is modified from a recipe I found so it would taste just like those my grandmother used to keep in the metal tin on the kitchen counter. These are bit more crumbly sugar cookie knock off, the coconut flour makes them super inexpensive to make and it makes a large amount. So I got to see my GI doc...3 weeks of being in pain, D and bleeding issues. I had a nice detailed report almost 2 pages in a word document summarizing each weeks pain, diet, supplements, my state, BM details, and conclusions. He read through the thing and asked to scan it into the records, then after a basic examination he ordered a CT scan and full blood work. So for the past 3 weeks I have been on a carnivore keto diet for the UC flare. Started off with just eggs and canned tuna but I have been adding other meats and happy I can eat many without issues I used to not. Well the end of this last month has given me some new perspectives and thoughts. Ever been in pain to the point where crazy, dumb, and bad ideas seem plausible? I am laying on the floor with the waves of pain thinking stuff like, Maybe if I take some Benzocaine gel put it in a capsule and swallow it I can numb this, perhaps I can mix it up in a enema? or the concept of wanting to reach up there and rub pain killing cream inside my intestines sounds pleasent..... Well I had been doing great but my Ulcerative Colitis flared bad the past few days. I have many suspected culprits as I tried a few new things and changed up my diet quite a bit the following are the suspects. So I have found some other issues I have found with my fracked up gut I thought I would share....rare anyone could relate to some of these but throwing it out there. FWIW, I have a friend who has Crohn's Disease, and had surgery for it when he was younger, but doesn't want to take some of the prescription medications to help him deal with ongoing symptoms. I told him to look into hookworms treatment.
