Back To Ground Zero
I got so sick this past week. The sickest I've been in a long time and I'm not really sure what happened. We were in NYC and my first night there we went to a place called Candle 79- they have a vegan menu and a gluten free menu. I ate like a princess! I had cucumber watermelon soup with cayenne pepper- sounds weird but so good. I had a bean and corn cake with a chipotle aoili for dinner followed by an ice cream sampler which included lavender blueberry ice cream- WOW! I am a fairly adventurousPainting In The Rain
I was making good progress on painting my patio today. I've been holding off on painting for the past few days because rain was forcasted. We'd get a lot of thunder, lightning, and bluster so I didn't want to paint if it was going to get rained on before it dried. But we never got any rain. Today, I decided to just go ahead and paint...got a lot done, then it clouded up so much I decided to put my paints away and go inside. Sure enough, it came a downpour...all over my not-dry patio. Today we had: rice and corn patties: 1.5 cups of cooked brown rice mixed with 1 c. corn, mashed together with 3 eggs (pre-beaten to a froth), 6 green onions, diced, and 1 tsp. garlic powder. (I fried them like potato pancakes in 2 tbl. spoons of olive oil.) Served with a side of: black beans: 1 can black beans, drained, mixed w/ 1c. salsa, heated until they began to simmer. My husband arrived home Sunday and it was so great to have him home. The only thing is that he arrived home with his ankles swollen worse then ever. But, this time he agreed to see a doctor. I had my CT scan on Monday and so I set up a doctor appointment for both of us on Thursday - to get my results and have him checked out.My tests came back normal - NO CANCER!!! . My son's school started today, although it's just a half day and a party. He's in 11th grade now and it's his first time to drive himself. Eeek! I've dreaded this day.Last Sunday night we had a teenager die in our neighborhood. The driver was a 16 y.o. who just got his license the week before. His 15 y.o. friend was on the passenger side and a 14 y.o. boy was in the back.The main road coming into our neighborhood is two lanes both ways. Today we had crockpot beef ribs with homemade BBQ sauce (Ketchup, mustard, vinager, brown sugar, salt.) The nearest support group to where I live is over an hour away. Well, I was diagnosed with celiac disease when I was 2 years old, and I am now 23. When I was younger, my parents always made sure I stayed on a gluten-free diet, but I found ways to sneak food, like cookies and cake. I was constantly losing weight and having horrible diarhea but my parents thought I was on a gluten free diet, so they couldn't figure it out. My daughter and I planned to go to the grand opening of the new Ikea store in the Dallas area yesterday. We were getting ready to go, but thankfully my daughter was listening to the radio and they were talking about the opening. They said that all the parking places were full and that the line to get in was all the way around the bldg.I hate crowds like that so we decided not to go. I don't like to write about health problems because when I actually write them down, I sound like a poor unhealthy sot...which I'm not. In fact, I've been remarkably healthy for someone who's unknowingly had a disease all her life. But I'm going to talk about my eyes. In addition to celiac disease, eye problems run in my family. It's a retina detachment disease called Waggoner-Steckler (sp?). My uncle has told me that the disease is named after our family (some claim to fame, huh?) becauBargain Hunting!
Yesterday was a great day! I was exiting the grocery store and they had a grocery cart out with discounted items. In it were about 8 boxes of 1lb boxes of sweet rice flour! Wow, how lucky am I? That's .50 cheaper than at the Asian market. The funny thing is that 2 weeks ago I wouldn't have known what to do with sweet rice flour.Now that I know what to look for, I hope that I can find more bargains like that. I am busy packing to leave town. We are heading south to LA, mainly to see the King Tut exhibit at the Los Angeles County Museum of Art. We are all excited about it, but I still get a bit nervous when we travel. You know...the food issue. We try to stick to safe restaurants, and we take snacks with us EVERYWHERE, but what is a supposedly safe restaurant has an uninformed chef, or server. I usually like chocolate desserts...chocolate cake, choc. chip cookies, chocolate cheesecake, brownies, etc. But sometimes a good cobbler is what I crave. And I do love blackberry cobbler. Well I am two weeks completely gluten free, and no signs of improvement in my sleep. Have to give it more time I guess, although I think I have a bit more energy. Haven't found it that hard to stay away from the gluten, just have to more aware of what I am eating, and show more will power. Our baby can come any day now. I think it will be sometime this week then again I don't think she will ever be born Last week we picked our pediatrictian. My husband is allergic to peanuts and I have celiac so I wanted a dr. that is familar with both. She said peanut allergies are not genetic. That was good to hear. He is very allergic and it is so scary. I know gluten is bad for me but it's not going to kill me if I eat it. I hope our daughter will not develop any of our problems.It isNew To This
I have never done this before so I hope I am doing it right. I have been gluten-free since Janurary of 04 and I am beginning to become tired of this whole thing. I am 8 months pregnant right now I am actually due in 3 weeks so that probably has something to do with being tired of being gluten-free. Nothing presently in my diet was mentioned in the article, but it does bring up the obvious point that my diet would naturally affect the health and wellness of the hookworms that live in my gut. Something to think about.

Yes, there are several gluten-free certifications out there (one is the GFCO), and the usual standard they claim is 10ppm, however, recent findings indicate that even the GFCO's higher standards may not ensure that foods they certify are gluten-free:
