Just made this last week and cooked our teriyaki chicken in it (and marinated in it too)

Wee I am now (or will be on the 1st of April..no joke!) an employed person. Got the kindergarten teacher position at the local Country Day School (gifted school).
I go in on Tuesday to sign the papers. I have to do a set of quick training they require the following week before I start too.
It has GREAT benefits... wow... But I will not be making 6 figures there... ah well. I will stash capital away and re-open my own private school NEXT year. Very exciting but it takes a LOT of plann
Finally, things are looking up. For whatever reason, I am now inundated with calls for interviews. Phew.. Just stopped writing this for 30 minutes because, yet another potential placement has called. BANG BAM BOOM! Here we go !!!
The SO is leaving in 2 weeks to spend spring break with his family in Germany. I really hope I am working by then because I will miss him too much and will need a daily distraction! Plus money... money is a good thing. I have been dipping into the savings these past
I am just going to whine whine whine...
There are not enough sad faces to print here!
On Saturday, I went to a birthday party. It was my Boyfriends classmates son's 3rd bDay party. Anyway, we got there a little early and the mom was not yet ready and kind of losing it. She had never decorated a cake before and did not really know how to do it.. So.. I kind of just took over.
It looked just like this... exactly like this.. in fact.. this is from pintrest and I wonder if it is her acco
Philly Cheesesteak Mac & Cheese
I used Tinkyada pasta for this but it can be done with zucchini and a spiralizer if you're already a pro at making and slightly drying the "noodles"
1 Package of Steakums (2 if you really want it meaty)
2 bags or boxes of any short cut Tinkyada pasta
1 large onion, chopped in large chunks
3 Bell Peppers, assorted colors, roughly chopped
1/2 a jar of sliced banana peppers (find them by the pickles and olives) with the heat level of

1 jalapeno, sliced
1 jar black olives

BLT Cheddar Melts with Tomato Bacon Jam
A Stronghold favorite! I have to make 12 ...for 3 people... I AM GUILTY TOO!!!!
I make mine first on my own home made gluten free/ corn free bread and then I get out THEIR yucky evil gluteny pan from the toxic cabinet and do theirs up on a sourdough.
For the bacon and tomato jam:
4 slices smoky bacon, baked at 350°F to crisp on a slotted pan, finely chopped
10 Roma tomatoes, peeled and seeded, chopped

Gluten/Grain Free Tortillas

I've made these a few times. Easy , quick, and delicious. You really do want to get them as thin as you can, though. Use a LARGE frying pan or griddle. The recipe calls for a small 8" on but I find it easier with a larger one so I can control size better. I will be making a casserole dish full of my own recipe "Mommy's Enchiladas Verde". Yep, to die for. *nods vigorously* You will need 12 of them so I have quadrupled th
Campbell's Tomato Soup Copycat
I adapted this recipe from produceonparade.com
The first time I tried this recipe was last night. I WAS FLOORED! It is such a good copy cat.. MY GOODNESS! I am still smiling. I used it to make a stuffed pepper stoup. But all of those things you can make with the canned stuff you can now make with this! Stuffed Cabbages baked in the pan for potlucks, family reunions etc.. or thrown in the crock pot! OH JOY!!! I do use a specific brand of tomatoes in
Salted Caramel Fudge
I was shopping and looking for caramel that was grain free. I found ZERO corn syrup free offerings so I bought some heavy cream and went home to make my own. If you need to be dairy free, You can actually use coconut cream from the can and vegan margarine. Apparently it works wonderfully. I cannot vouch as I've never tried it but EVERYONE should make home made caramel OH DEAR YUM!
So you will need to make your caramel first. It only takes 15 minutes! I left
Eggs in Purgatory 2 Ways
Tonight we are indulging in some simple but fresh and delicious Italian fare. There are not a lot of ingredients so be sure to use the BEST ingredients. If you go for the 1st way, as I have this evening, be sure to find the darkest red tomatoes you can find. Actually use fresh basil and grate your own parmeggiano (or pecorino),
If you make it the second way, be sure you use San Marzano tomatoes. You CAN taste the difference and it is all worth it. Both ways are s
Brynja's Artichoke & Sausage Baked Ziti
This one is not grain free. I used Tinkyada pasta. It is ONLY made from rice and it has GREAT texture. It is the only grain I have found that my body will agree to. If you are unable to have any grains, you can modify this with some carrot noodles spiralzed! I've done it that way too. Delish!
2 lb Johnsonville sweet italian sausae (not in casing! The ones in the caing have corn syrup in them)
2 can artichoke hearts, chopped

Beef Nacho Soup & Smooshy Applesauce Dessert
Tonight's Soup is Teen choice night. My girl is a soup addict. We are having it with a side of sliced avocados, tomatoes, jalapenos, and black olives. If you have grain eaters in your home, you can serve it with a bag of good tortilla chips.
2 cans beef broth
8oz. Cream cheese, softened
8oz. cheddar cheese, shredded
1/2 cup heavy cream
1 medium onion, finely diced
1 small can mild green chiles
Gennaro Contaldi’s Fried Stuffed Gnocchi
OK before you even get started, I need to tell you this is work. I have slightly modified the recipe so that it is grain free. I make my own Gnocchi pretty often and it is just one of those things that takes some practice. No need to worry, it will still taste perfect... its just practice to make them look pretty AND go quickly. I make this as a meal, not an appetizer. YUM YUM!
NOW... THIS STUFF IS RIDICULOUSLY GOOD! EAT AT YOUR OW
Roasted Goat Cheese & Garlic Spread
I made this as an appetizer over the Christmas holidays. Everyone RAVED, a lot. If you were of a mind to try goat cheese, this is a yummy way to go. Even the kids and teens loved it. It is so creamy, sweet, and savory ...it is mouth manna!
6 to 8 garlic cloves, peeled
1 tablespoon EVOO
1 medium red onion, thinly sliced
2 tablespoons butter
1 tablespoon brown sugar
8-10 ounces soft goat cheese (the big

All Day Roast Pork, Spicy Apple Chutney, Mashed Citrus Sweet Potatoes, and Sauteed Chard
***Save left over Pork and Apple Chutney for a hot sandwich. I use Against the Grain baguette and then I load up a layer of shredded pork roast, apple chutney, and top it with EXTRA sharp white cheddar. I shove it under the broiler for a moment until its a nice melt and then we feast like kings.

All the flavour of chicken wings from the local pub around the corner. Topped off with a yummy, creamy "dressing" and carrots and celery on the side for extra dipping. This is just as messy as that Styrofoam container of wings, so get out the napkins! Its a heck of a lot healthier though.
For the meat:
3 tbsp butter
2 lb ground chicken breast
Salt and Pepper ( I use kosher salt and a pepper grinder)
2 tbsp fresh thyme leaves or 1 tsp dried

So I am just going to keep gluten-free and grain free recipes in this blog. I love to cook and since I have a severe and immediate reaction to gluten and corn and I just try and skip soy... I skip the grains. With the exception of rice. All of the things I list that have bread or pasta are made with rice flours. No corn or anything else. You are of course free to substit
