Imagine a sunny day, the perfect setting for an ice cream treat. There I was, at the counter, asking the young waitress if any of their flavors were gluten-free. Her face contorted into a look of utter bewilderment as if Iād asked her to solve a quantum physics equation on the spot. āGluten?ā she echoed, her expression a mix of confusion and mild horror1.
