Panko Fried Chicken
This one uses a really thick heavy batter to make the breading stick better. For the panko I used seasoned pork rinds crushed enough to be breading with a extra 2 tsp of bbq rub mixed in but you can use baconshair pork panko and season however you want. 4 oz pork rinds crushed into a powder like texture(or pulsed in a food processor with the seasonings) 2tsp or so of seasoning of taste whisked in with the pork rind panko 2ish lbs of chicken cut into nuggets or strips if breast o do legMixed Day.
SO today was a mixed day. First thing this morning my emotional support animal died, I talked on a forum for his kind and his quick and sudden death was said to sound like he ate something poisonous. I figure a wild cricket got in to his enclosure and he ate it. (their is poison applied around the outside of the building) Moving on from that, I think I perfected making a hostess doughnut knock off and will post this later I found I could modify my monkeybread/cinnamon doughnut recipeHeatherfield Foods Inc. Recalls "Gluten-Free" Pork Sausage Products Due to Wheat
Heatherfield Foods, Inc., an Ontario, Calif. establishment, is recalling approximately 4,380 pounds of pork sausage products due to misbranding, the U.S. Department of Agriculture’s Food Safety and Inspection Service (FSIS) announced today. The product has a gluten free claim represented on the front of the label; however, the product contains gluten in the form of wheat. Wheat, which is an allergen, is also listed in the product’s list of ingredients. The raw Longanisa sausage items were pSeptember 2019 Update
Well I started off doing breakfast bars at the farmers market yesterday. A unforcasted thunderstorm rained it out but I ended up with 6 orders from regulars for curbside pick up lol. I still have all my baked goods in the display fridge in the store front window but low sales there. >.< I did go ahead and chop up toast, and currently dehydrating the bagels into bagel chips. I think I will be eating waffles, turkey sausage, paleo bread, and cookies for the next week lol I rearrangedHometown Food Company Issues Voluntary Recall of Martha White Gluten Free Sweet Cornbread Muffin Mix Due to Possible Presence of Gluten
Celiac.com 08/29/2019 - Hometown Food Company today initiated a limited, voluntary, consumer-level recall of approximately 374 cases of two specific lot codes of its Martha White Gluten Free Sweet Cornbread Muffin Mix, due to standard quality batch testing that indicated the presence of gluten derived from wheat, rye, barley, or crossbreeds of these grains. For people who have a wheat allergy, celiac disease or gluten and wheat sensitivity, consuming gluten or wheat may have adverse health effecTraveling, Hotel, and Convention
So two weekends ago I was sharing a room in a hotel with a couple for a convention I was attending with my normal chef kit set up and brought tons of baked goods, full on meals, etc all Paleo and gluten free enough for the 3 of us 3 meals a day for 4 days with snacks (about $150 worth). I set ground rules of no corn, or gluten in the room since I react the worst to them....well it went pretty bad. They could not seem to grasp this concept and kept bringing in and spilling corn based cokes (I proPaleo Tots
So concept was make tater tots with another veggie, went with a broccoli recipe and modified it, It taste like broccoli casserole and tater tots had a kid. Been in my rotation for the last few months but I do my personal batches with just a faction of the onion and garlic. 10oz of broccoli florets steamed 1/2 Onion minced in a food processor 1/2 tsp garlic powder or 2 cloves processed 1 egg whisked 1/2 cup (60g) Almond Flour 1/4 Cup (28g) Flax Meal 1/4-1/2 tsp ground black peppeAugust Update 2019
So been playing with a few things and testing some waters. Recipe wise I have 3 different chocolate chip cookie recipes I do now for my bakery the last 2 developed these last few weeks, one puffy soft cookie, one flat soft slightly chewy cookie. I was inspired by National Chocolate Chip day earlier in the week. My previous ones had the texture of a crunchy chips ahoy. I been talking with my mom about recreating my grandmas tamales using a recipe I found for corn free low carb ones and usiPaleo Ranch Dip
I make this dip for veggie trays when catering, it taste just like buying the ranch dip packs you used to and mixing with sour cream. 1 16oz tub Plain Unsweetened Vegan Yogurt (I use Kite Hill) 3 tsp Apple Cider Vinegar 1 tbsp dry dill weed 1-2 tbsp Nutritional Yeast (Optional but gives it a better flavor in my opinion) 1 tsp Garlic Powder 1/2 tsp Onion Powder 1/2 tsp Dried Parsley 1/4 tsp Salt 1/4 tsp Ground Black pepper 1. Mix your dry seasonings in a small bowl anVegan Bacon Cabonara
This is interesting and requires some specialty products, I found this was a challenge to cook for someone and it turned out pretty good, the following makes a single serving. 1 Package Miracle Noodle Angel Hair rinsed and prepared 2 tbsp Coconut Flakes (Lets go Organic work great) 1/4 Cup Scrambleit By Spero Foods 1/4 Cup (56g) Chevre by Spero Foods (the Smoked Paprika takes this next level) 1/4 Cup Almond Milk 1tbsp Liquid Smoke 1tbsp Coconut Aminos 1/4 tsp onion powder 1/2-1July Update 2019
Bit late but dealing with various issues. Medical, oh recall the scope I went to get down and MOSTLY covered by medicare so I only had to pay $50 down and $50 a month for 4 months for the hospital? Well now the GI doc is billing AGAIN for some $10 (random) and then the LAB contacts me saying I need to pay over $2k for pathology reports....what?! I have to ask is there some law where they have to give cost up front for planned procedure that goes fine? Because hitting with bills like this shoulMothers Meat Loaf
So in a effort to make meat loafs I have gone through several versions with 3 I still do I use 2 cooking methods depending on time, I can cook normally in the oven in a meat loaf pan (made to drain the grease) Or I can use my instapot version and do it in smaller loafs each a bit over 1lb 2 at a time. First I will start with the one I often fix my parents I based it off my mothers recipe just subbed in almond flour for saltines and plain tomato sauce for ketchup. I will post my other versions laGluten-Free English Scones
Been looking everywhere for gluten free scones like the English scone my mother used to make in Wales. Here it is ! 1 ¼ cup gluten-free all purpose flour. I suggest using King Arthur Flour. 1 scant 1/3 Cup of sugar 2 tbsp. baking powder ½ tsp salt ½ Cup (1 stick) of cold butter ½ tsp. Of Xanthum Gum ¾ Cup of chosen additions (Suggested) dried cherries, cranberries, fresh blueberries, cinnamon, or white chocolate chips, blonde raisins. But don’tKitchen and Life Upgrades
So I got a good deal at a restaurant auction for a prep center brand new at 1/30th retail. Seems the manufacturer of the custom unit forgot something looking at design notes....it was supposed to be modular to fit in a building. Well it is one solid 97"x48" stainless unit welded to a steel frame, which requires removing my door, removing the door frame, and using a engine hoist from the machine shop next door and 4 guys to to get in on its side. Next issue I am having to address is now to sAlmond Butter Muffins

So I had my follow up appointment with my new GI to go over my pathology report. There are no signs of celiac or UC, he said there were no medications he needed to prescribe and that my treatment regime was working great. He suggested my random digestive issues could be a new sensitivity or a intolerance or even hormone related like with insulin. He was quite surprised with the UC healing without RX and even had to get my old records from the GI that diagnosed it. >.< I was sort of hopinSpinach and Bacon Crustless Quiche
I often suggest making crustless quiches to people, here is one of the base recipes I have used. 10 Slices of Turkey Bacon, Cooked and chopped (I did a mix of crispy and chewy cooked) 1lb bag of frozen spinach thawed and squeezed of excess water (Take a tiny bit of a corner off thaw in the sink and squeeze water out the corner) 1/4 onion sliced very thin (mandolin helps) 6 large Eggs 3/4 cup Almond or Coconut Milk 8oz Shredded Dairy Free Cheese of Choice (I used Lisanatti Almond CWalnut Butter Fudge Brownies

Well, farmers market sales have been up and down, but I got great news on them redoing the laws here. I can now offer and sell my baked goods online and actually advertise about it, so working on an online site now. The building I live in might be sold soon, this is sort of a good thing, I will get enough money out of it to build a cheap steel building and frame out the inside, this time making a separate commercial kitchen (commissary). This way I can legally cater, do meal deliveries, anBagles

The Scoop in Barley: Barley contains gluten and that is where some of us "get stuck". It is frequently used to make malt. That is why the normal beer is so bad for the celiac patient. As a general rule you should avoid natural or mal flavorings a food has natural or malt flavorings in the ingredient list, contact the company so see if these flavourings cam from a non-gluten source.
