January 28,2007 Rant Warning
I'm on a couple of boards now that has bickering going on because of "celebrity spokepersons". I don't get it. Why do we need a celebrity to validate what we have? Does it make the disease any more real? No. Does it make it "ok" to have? no. It might make it the flavor of the month disease which we don't need. I truly don't get why people think it's such a grand thing to have a celebrity vocalize their disease. It doesn't change my life or my disease if celebrity 'X' has it. It doesn't mWhatta Day
Unfortunately for me I was ahead on a project at work and what does one of my teammates do? He tells the boss we'll be done a week early!-Meaning I had to work nonstop and late to finish it in time for Monday and so did the secretary. whatta jerk. THEN, I'm driving home and there's an ambulance, so I pull over. I'm looking in the rearview at the PT Cruiser behind me and she pulls over, too BUT THEN she hits my car! Today is a big day. Son has Shakespeare auditions and a talent contest tonight. I would be so nervous and he's goofing around like it's another average day....I guess for him it is. He's really into this entertainment field. I had a horrendous night Thursday night. I had the most massive RA pain that I've ever had in my two years of this disease. I found out the dizziness wasn't from being glutened. I KNEW I'd been extremely careful! It's from my RA medicine. That's one of the top side effects, that and diarrhea I'm feeling very good this morning, husband said I'm "buzzing". I feel that way when I'm completely gluten free. I have so much energy it's annoying! It's pretty sad when I start laundry at 7 in the morning. I hate doing laundry. I had to have something to do though. I got FAT over Xmas! Two weeks in IL with Gramma and MOM cooking "special" for me and mom& her bf taking me out to eat (they'd go twice a day, not me- once a day was my eat-out limit!) But, I felt like I had to eat the desserts my gram made--a little each day, since nobody else ate any "special" food. 9 lbs later, my clothes are tight! But now I've lost 4 of the pounds already. son got his call today, not only did he get a part in the play, he got 3 parts! Tomorrow we start "the drive". We got around 7 inches of snow today. It's one of the prettier snows we've had in years. It's not dreadfully cold either, it's one of those snows that you want to go out and walk in it. I must have been glutened cuz I've been having those weird dizzy spells in the top of my head today. DH had the kids on Friday night so I went over to a friend's house for Mexican food and drinks. The woman preparing the food was so funny. She knew I was allergic to wheat and everytime she used the corntilla (made-up word) fork on the flour tortillas she'd swear at herself and throw the fork into the sink. She went through at least 10 forks! They went to the Ranch Market to pick up the food. Ranch Market is a cultural experience if you ever make it to the metro-Phoenix area. EverythingPot Roast...

Well, we're gearing up for a busy spring. Son just got a call-back from the theater. He'll be in at least two if not three big productions this spring. This means about 150-160 miles driven every single day from now until late April. I'm doing well with my diet but I'm a little under the weather. I don't have the stuff everyone else is fighting but I do have a sinus infection. It's mostly bothersome because it's settled in my ears and my hearing is off a bit. Good evening all, Today was a good day. We had professional development meetings all day and the boss took us out to lunch. It was at a sports bar. Lots of burgers, sanwiches, deep fried everything, etc. I had nachos. They were really good. They had real cheese on them and fresh salsa on the side. I couldn't ask for anything better. So school starts on Tuesday. After a year and a month of hives I am finally hive free for 7 days! It is nice to feel pretty in my own skin again. Somedays I thought I looked like a big pink splotch and nothing else. But other than that, I am starting Spring Semester and I have a lot in store for me. I invited over my co-worker for dinner. She's a ball. I late 50s-something widower from New York via East Germany. I made Spanish tortilla with eggs and potatos, then served a green salad and mint tea. Just a simple dish but everyone seems to like it! Spanish tortilla: Slice 4 fist sized potatos into 1/4 inch pieces and fry in canola oil until tender Beat 6 eggs with a fork until well blended. Today started off bad, at 8 am the phone goes, and it is the hospital telling me that they have booked me in for a gastroscope next Thursday at 8am. I know I need it done, even if I have been gluten free for over a year, just think it took a year for the appointment to come through. The doctor said it would take a while and that by the time I got it done I could've healed, and that it was more to make sure that nothing else was wrong with me. Today the temperatures in the 50's. The forecast is for ice Friday and snow Saturday. That wouldn't be bad except I have to drive 160 miles + on Saturday. Everyone got sick but me. My husband got sick and threw up all X-mas night. I was afraid it was something I cooked, but that couldn't have been it because no other family member or guest got sick. I had a little of everything and I didn't get sick. So then I was really worried that it was a virus and that I was going to get it. I hate throwing up worse than anything. As I sit in the office kitchen eating my lunch that I brought from home, again, I often reflect on how much money being a celiac is saving me. Everyone eats out, well most people do, and I always carry in. Sure, I could order salads and what not, but boy...salad sure does get boring. I also don't buy a bunch of specialty foods. Sometimes I'll get a cake mix, cookies, or some Trader Joes rice pasta (the big round ziti noodles are the best), but mostly I just eat rice, potatos, and corn. SJanuary 07, 2007
Everyone is sick here but me! Hubby has tummy troubles and headcold, son has the headcold. I'm stuffed-up but no big deal. I think I'm avoiding this so far because my system is so much stronger, even with the dmards. My diet has been really good, my energy is better, my mood is definitely better. I sleep more soundly and wake rested. Everything seems to be processing thru my system better too. I know this is odd but I've noticed my hair color is brighter and shinier. Made my first gallavant to the GIANT liquor Mart in the small town my mom lives in. I joyfully discovered the New Grist in the back and paid for it while the 'rents shopped for cheapo wine for the New Year. As I stood waiting, a woman with a MULLET approaches me and gabs on and on about the coupon she just got to get a rebate on the giant bottle of the hard liquor the she just bought. And I just stared. I'm sure I'm not the perfect gift giver,and I don't want to seem ungracious, because these gifts give me great stories to tell and I've often regifted them to people who hopefully appreciated them or could use them. Since I was out of town with family for two weeks, I ate out once a day, on average. I was kinda excited to visit Steak N Shake and Famous Dave's, Carnivale, and Lou Malnati's Pizza, none of which are available in California where I am. Steak N Shake. Good bunless burger. Nothing presently in my diet was mentioned in the article, but it does bring up the obvious point that my diet would naturally affect the health and wellness of the hookworms that live in my gut. Something to think about.

Yes, there are several gluten-free certifications out there (one is the GFCO), and the usual standard they claim is 10ppm, however, recent findings indicate that even the GFCO's higher standards may not ensure that foods they certify are gluten-free:
