1st Gfg Meeting.
I went to my 1st Gluten-free-group meeting yesterday and I met the nicest bunch of folks! We had the bakers from one of the local gluten-free baked-goods lines come in and show their wears. YUMMY! Those little pecan cakes were really good. And someone came up with the cutest name~Winkies~ Guess what those were? Yuuuumm! I got some doughnuts and shoved them in the freezer for later! My first Blog and I never thought I'd be talking about my Gluten-free life. See, it's been a part of me for about 7 years, but more seriously in the past 2 years, only because that's how my life's kind of evolved. It's been in my face more, mostly because when I "cheat," I feel like crap. I've been feeling like no one I know understands because guess what? They don't. They have no clue. As I stated in the last blog, my elementary years were pretty uneventful for health issues. I did pretty good until about 5th grade. I had a best friend who was 2 1/2 years older than me--we were inseperable. I remember one summer, I think I was in 3rd grade, and she was in 6th, we wrote, directed, and produced a show we put on for the neighborhood. We actually wrote 2 short plays and had a "gong show" (it was popular at the time--dating myself here!). We made programs, had costumes, and got mosA Little About Myself (ok, Maybe A Lot!)
I guess I'll tell a little about myself. The celiac disease is just the tip of the ice berg for me. And I seem to be doing pretty well with it, so I'll have a boring blog if I just talk about my Celiac disease. So I'm going to tell you about myself. I'm going to post this in several installments, otherwise I'll get carpal tunnel typing it! I was born November 5, 1968, with Spina bifida- a common neurological birth defect. They had me speak to a nutritionist...she said that all of their canned veggies are gluten-free, except that the canned beans were made on the same line as their baked beans which are not gluten-free, so the canned beans could have gluten in them. Just a heads up, I wonder if this is true for the other brands of canned beans?1st Attempt At This
I figured out I had Celiac Disease almost 2 months ago now. The ARNP at my Dr's office had suggested I look up Celiac Disease on the internet, because I had been having such a horrible bout of diarrhea that I missed a week of work. He also said to try the gluten-free diet for a month and see how I do. I had heard about Celiac actually from research I had done about 8 years ago when I was having a lot of the same problems. We went to an open house today and we really like it. Well, it's a town home. But for first-time buyers it's what we could afford. The owner is in a contract right now and thinks that it is going to fall through. If that's the case, then she's looking for additional buyers. It'd be awesome if it all works out. I've had a terrible crik (sp?) in my neck for the past week. It started Monday and by Tues. I could hardly turn my head. It was 90% better on Wed. and Thurs., but came back with a vengeance on Friday. Now it's better this morning. I don't know what's causing it. Ouch! Here's another picture of a mural I did. I paint with a friend and she painted almost all of the water...did a fabulous job. I painted the whale tail and she painted the water all around it and pouring off of it. The whGluttened!
The bad heartburn started yesterday afternoon and we thought that I had accidently got some of my husbands bread crumbs when I made my sandwich. So, we have now designated a counter just for him (his idea). Then we decided to have two dish towels - one on his counter and one on mine. This afternoon the heart burn has gotten worse and I again have a temper, plus extra trips to the bathroom. I only get the temper when I get gluten. I just wrote a long blog that disappeared when I hit "post". I don't know why my internet connection always gets these memory jams--mostly when I've just composed a long, thoughtful email. I'll hit send and it hangs up and then says "page cannot be found." How annoying.The title of my original post was "Hot as H***" and mostly I as complaining about the heat. I have to say that they have the best ice cream in these parts... I got 6 half gallons of different flavors (they were on sale and I had coupons = $1 each, yipee!) A couple of people have asked for my blackberry cobbler recipe, so here it is:2 cups sugar1/3 cup butter2 cups flour (I use Bob's Red Mill gluten-free)2 tsp. baking powder1 tsp. salt1 cup milk2 cups blackberries (fresh or frozen)** 2 cups boiling water**The doughy part is overwhelming to me so I either increase the berries or half the dough part of the recipe. Today I went to one of our huge resale book shops. You bring in your books and magazines and can trade them for credit. All of their inventory is used...there are about 5 of them around the Phoenix valley area. So, I went looking for gluten-free cookbooks. As I was browsing I realized that there aren't going to be many gluten-free used cookbooks because A.) being a Celiac is for life so you're always going to be using the recipes from them, and B.) it's only recently recognized as being a coAches And Pains

Tonight it's leftovers roast chicken...I tried a Kroger brand chicken seasoning instead of my usual McKormick...it stinks. Got up at 6:30 this morning so I could get another coat of paint on my patio before the rain comes again. I won't complain about the rain because we sure need it. We've been as dry as bones around here this summer. Nothing presently in my diet was mentioned in the article, but it does bring up the obvious point that my diet would naturally affect the health and wellness of the hookworms that live in my gut. Something to think about.

Yes, there are several gluten-free certifications out there (one is the GFCO), and the usual standard they claim is 10ppm, however, recent findings indicate that even the GFCO's higher standards may not ensure that foods they certify are gluten-free:
