Celiac Disease & Gluten-Free Diet Blogs

Diagnosis Day - Also Known As D-day....

I decided to create my own blog as I'm a newly diagnosed Celiac and have learned a lot in the last several months. I was diagnosed on May 22nd, 2009 when a nurse called me to tell me I tested positive for celiac sprue.... At the time, I was looking at a slice of pizza from Pizza Hut that I was about ready to eat I had not been feeling well for quite a few months which is what started me down this path - more on that in a future post....   Little did I really know how much my life was goin

Finally Putting Pieces Of The Puzzle Together

When I was a teenager I began to realize that the food I ate directly affected how I felt physcially. Years later, I determined that food had a profound affect on how I felt mentally as well. I always wondered why others could easily consume "junk" food without the same ill effects I suffered.   I became famous as the resident insomniac and even more famous for the after-affects of eating pizza and drinking beer (or ANYthing else for that matter). The gas and bloating was more than a mere d

Baking Bread

So, last night I went to 'Whole Foods' in Providence for a free tour of the store with other 'Celiacs' given by a Nutritionist/Celiac of 15 years. It was very interesting as we went through the store and she explained many of the products and showed us what to look for on labels and how the store will segragate many of it's gluten-free products in each aisle. She also told us what some of her favorite gluten-free foods were and how to prepare some of them. Whole Foods also has many of their own

S'mores! And More

Kinnickinnick gluten-free Graham Crackers + chocolate + marshmallows = Yum to the Oh Yeah! I never thought my trigger would be tripped by a plain ol' graham cracker! I have yet to master the way I got it once to be soft and warm in the microwave. They are no where near chalky. So nice. Unfortunately, I also laid my hands on some Andean Dream Quinoa Cookies-yuck...aside from $ down the drain, they're a waste of calories in the sweets allowance, so I spit it out. Also sampled St. Amour Bro

I have been sick for 15 years now. I know how long it's been because I was 14 years old and starting my sophomore year of high school when it started. I have chronic nausea, fatigue, and a bunch of other symptoms that are annoying. My main complaint is nausea. I have had so many tests done over the years and they all show that nothing is wrong with my and I am healthy. It wasn't until a few years ago that my GI Dr. sent me to have a test done to see if my gallbladder was sick. I was very s

The Dr called yesterday with the results of my bone density test, and it showed that I have weakening of the bones.....Osteopenia....and am to continue taking calcium tabs with vitamin D. He is going to confer with an endocrinologist to determine what medication will be suitable. So I guess I'll be hearing from him again soon. Made some gluten free blueberry muffins last night. Going For Bone Density Test Today

Well, today I go for a bone density test to check for osteopenia or osteoperosis. The dr just wants to see if there are any problems considering my age and not knowing how long I may have had celiac disease. Yesterday I made some gluten-free brownies using Bob's Red Mill brownie mix. They are actually VERY GOOD!!! Moist, and taste like real brownies! Added some walnuts... YUM!!! Much better than the one's that I got from the bakery. Those were sooooo DRY! Of course, I have my favorite res

Feeling Different

I don't like feeling so different. The world has it's standards about health care. Western meds is what the majoriy believe in. I don't know what I. Believe in I know that my mom believes in eastern meds and alternative meds and healing so I am swayd by that but at the same time I want to be part of the majority. How do I explain to someone that I am being treated holistically while they keep quetioning why I do it I and how I should get a second opinion. Idk why what others think affect me so

A Little Ranting

I've used the term "medically challenged" to describe myself for years. When I Google the term it seems to describe people with mental disabilities, but I think it describes my life perfectly. I've been sick since I can remember. When I was very young I would be so starving I would beg my mom to order me a lot of different foods and she would say, "Are you sure you want to eat all that?". Yes, yes I did want to eat all that even though I was so skinny people continuously commented on my size. Bu

Just Back From Dr.

Well, I just got out of the Dr.'s office. We went over all my tests and for the time being, in addition to now having to live 'gluten free', I am to start taking calcium and vitamin D tablets 3 times a day. Next Thursday I am going for a bone density scan because Celiac Disease can cause osteoperosis, and because of my age, and not knowing how long I have actually had the disease, the good Dr wants to see what condition my skeleton is in. It's best to know I suppose. Anyway, just x-rays of some

Learning How To Cook Gluten-free

I got home from work last night greatly anticipating having my home-made gluten-free meatloaf....I love meatloaf....the way I USED TO MAKE IT! I had to modify it by using gluten-free bread crumbs, and other seasonings. I was disappointed at how dry it was. The flavor was just OK.... nothing to write home about. Maybe the gluten-free bread crumbs absorb more of the grease from the ground beef? Maybe I need to use less of them? And maybe REAL chopped onions and peppers instead of the f

Yesterday... But Today...

Yesterday I was not well. It was a tough day. That's all I really remember. I just remeber hvin a hard day. And I think that it was because of what I ate the niht before. I make a bad ass adobo atong:) my mom really likes it. Ther is no gluten in it. Before going gluten free I used to use soy sauce but now a days it's Braggs Liquid Amino Acids and Braggs Apple Cider Vinegar. It was yumm yummy!! But I thinkthat I reacted to the vinegar sooooo until I am 100% I won't be having any adobo's. BOOOOO

Getting Used To This

Spent most of last night cooking for the week. Had to empty all the food out of my 'fridge' and cupboard to make room for gluten-free food. Made some gluten-free pasta and a meat sauce, and a meatloaf. Used to love my meatloaf! It was made using Lipton onion soup mix. But that can't be used now, so I had to get gluten-free bread crumbs, and used some makeshift seasonings to try to imitate it. It looks dry, but I took a little taste and it seems to taste ok. I can no longer eat instant mashed p

Gluten Free Cheese Cake

Today we celebrated Adam turning 30. Whoo hoo! The first time I met him, 10 years ago at Liberty, one of our first dates was celebrating his birthday. He told me his favorite birthday dessert was this no bake cheese cake his Mom made him every year. So from that time on that has always almost been his birthday cake from me...until we found out he had celiac that is. Graham crackers have gluten in them. Until now! When going to Kimberton Whole Foods, I was excited to see that Kinnikinnick has glu

Buckwheat Muffins

Okay so I bombed out on the muffins tonight. It's a really bad sign when even your very polite, gluten free supporting in-laws say that, "everything else tastes so good I just don't have room for a muffin." It all started out so inocently. I was minding my own business in the whole food section of the grocery store when I noticed a bag of buckwheat flour. I thought to myself, "Wait, isn't buckwheat one of those naturally gluten free flours that they make pancakes out of and sell them at Cracke

Gluten Free Pumpkin Muffins

I just adore Fall. The air turns colder, the leaves start changing colors and you start to see pumpkins at every road side stand. Hence the need for a good gluten free pumpkin muffin recipe! The other week when it was my turn to bring the snack for Bible study, I racked my brain of what to bring. No food allergies! The sky was the limit. How fun would this be. So I looked up a bunch of recipes for pumpkin muffins and came across one of the easiest and weirdest cooking anomaly's ever in muffin

Up And Down

Today was a better day. Not so much fog. I tried to teach my nephew how to play chess. He is only three lol. So we made up most of the rules for his chess game. Had some ups and downs today. But the overall day was better than the past days. Around 4 pm I actually thought positive and for the future. I was making a shopping list for my mom and we were trying to plan the dinner for the week and how much would fit in the ice box. Then I said "maybe I can do the next grocery run ". It was a surpris

John Scott pointed me to Wiki entry about the effect of diet on hookworm egg production: https://www.helminthictherapywiki.org/wiki/NA_incubation:_very_detailed_method_by_Alana#Promotion_of_egg_viability_by_dietary_manipulation

Nothing presently in my diet was mentioned in the article, but it does bring up the obvious point that my diet would naturally affect the health and wellness of the hookworms that live in my gut. Something to think about.

Yes, there are several gluten-free certifications out there (one is the GFCO), and the usual standard they claim is 10ppm, however, recent findings indicate that even the GFCO's higher standards may not ensure that foods they certify are gluten-free:
