Learning How To Cook Gluten-free
I got home from work last night greatly anticipating having my home-made gluten-free meatloaf....I love meatloaf....the way I USED TO MAKE IT! I had to modify it by using gluten-free bread crumbs, and other seasonings. I was disappointed at how dry it was. The flavor was just OK.... nothing to write home about. Maybe the gluten-free bread crumbs absorb more of the grease from the ground beef? Maybe I need to use less of them? And maybe REAL chopped onions and peppers instead of the fYesterday... But Today...
Yesterday I was not well. It was a tough day. That's all I really remember. I just remeber hvin a hard day. And I think that it was because of what I ate the niht before. I make a bad ass adobo atong:) my mom really likes it. Ther is no gluten in it. Before going gluten free I used to use soy sauce but now a days it's Braggs Liquid Amino Acids and Braggs Apple Cider Vinegar. It was yumm yummy!! But I thinkthat I reacted to the vinegar sooooo until I am 100% I won't be having any adobo's. BOOOOOTired Of Being Sick!
Okay So my Name is Jade(on here anyway) And i feel like ranting. I was born sick and i'm still sick and I'm tired!! So all my life I had these stomach problems and I was always tired and gained weight rapidly and could never lose it. My immune system sucked and I was always missing school cuz I was always getting sick. So had to make a big adjustment to being celiac and now I'm having yeast problems. Which means that not only will i have to do celiac I have to do candida diet too!! Does anyoneGetting Used To This
Spent most of last night cooking for the week. Had to empty all the food out of my 'fridge' and cupboard to make room for gluten-free food. Made some gluten-free pasta and a meat sauce, and a meatloaf. Used to love my meatloaf! It was made using Lipton onion soup mix. But that can't be used now, so I had to get gluten-free bread crumbs, and used some makeshift seasonings to try to imitate it. It looks dry, but I took a little taste and it seems to taste ok. Today was a hard day. When I woke up for my snack at five am this morning I had a hard time. I guess my blood sugar went low. As I ate I felt better. My limbs felt weak and my head was heavy I kept shaking it Idk y. I don't know. The day went on andnit was just diffiult to go through. I knew I should eat but I was not hungry and making myself eat sucked. Brain fog today. It was hard to help myself. I was able to take a nap. Today we celebrated Adam turning 30. Whoo hoo! The first time I met him, 10 years ago at Liberty, one of our first dates was celebrating his birthday. He told me his favorite birthday dessert was this no bake cheese cake his Mom made him every year. Okay so I bombed out on the muffins tonight. It's a really bad sign when even your very polite, gluten free supporting in-laws say that, "everything else tastes so good I just don't have room for a muffin." It all started out so inocently. Today was a better day. Not so much fog. I tried to teach my nephew how to play chess. He is only three lol. So we made up most of the rules for his chess game. Had some ups and downs today. Good morning friends, Today I have to start keeping a food diary of all I eat and drink for the next 3 days before going to the nutritionist. I don't know if the paper is large enough to list all the bags of m&m's I will be eating?!! lol Is all gluten-free bread as hard as a brick?? I used it for a grilled cheese this morning. Hello Everyone! I was diagnosed with celiac disease about six months ago or so. I was doing well. I felt a lot better right away. Then in August I messed up a number of times by eating out. Now I have been very strict. Although still a learning curve with hidden gluten/cross contamination. My number went from 37 to 10. My thing is I have been getting very nauseous for about a month now. My GI doc thinks it is because I still have gluten in my system (the number being 10 still).Have To Eat Gluten For Testing
I have been gluten free for 4 months and my doctor wants me to eat gluten for 3 weeks in order to test for celiac. How much gluten a day do I need to eat? I'm not sure I'm gonna be able to handle this for 3 weeks!!Good Morning!
It's is a better morning. Woke up shaky and weak ate some food and took some remedies and wow wow I'm feeling better. I think my thoughts are clearer. Not 100% yet but getting further away from 10%. I am learning to accept that I am a sensitive person. And that I need to take care of my body. I am a painter and I recently found out that the medium that I work with that I thought would be harmless to me is actually harming me. I had a really rough morning today. Apparently my adreanal glands are working overtime on getting the lead that my body absorbed from when I paint. I was angry because I poisoned myself with the medium. Having just been confirmed that I have Celiac Disease a few days ago, the doctor had me make an appointment with a nutritionist which will be this coming Thursday. The nutritionist is having me make a list of foods that I eat and like. As I was making this list it occurred to me that many.....MANY of these foods I will no longer be able to eat and that makes me very sad. For those of you who don't know, I'm a fantasy fiction author. I love to write. I can't communicate all that well by talking, but writing suits me perfectly. Poems, songs, books, even papers -you name it. I love to write. Well, with a combination of starting a story around Feb/March, writing (this is all by hand) 181 pages in April, and writing 150 pages last month and several misc. pages in between, I've finished my first book. I went for the blood test some years ago, after finding celiac.com on the food net work.. I was amazed I had all but one symptom. So I stopped eating wheat glutens for 2 months to see if that would change anything in how I felt. It surly did. I then went to the doctors to let them know my findings since they could not for the life of them figure out what was wrong with me.. 8 doctors and 100,000.00 in tests previous to that. I finally get the blood test and they tell me it is inconclusive. IMarching on Gluten-Free!

its 5:55 am here in New York and I have been awake since 3 am with EXCRUCIATING stomach pain. I have been gluten free for two weeks now and feeling SO much better until right now. HELP!! what is this pain? It is right under my ribs in the center and shooting to the back. Nothing makes it feel better. FWIW, I have a friend who has Crohn's Disease, and had surgery for it when he was younger, but doesn't want to take some of the prescription medications to help him deal with ongoing symptoms. I told him to look into hookworms treatment.
