Managing Hives & Gluten Allergies
I have a celiac-related condition that causes severe gluten sensitivity and hives. Two weeks ago, I visited a Naturopathic doctor. She and I talked for nearly three hours. It was a very good meeting where I shared my past physical issues and she took copious notes. I am going on vacation to Cancun I really need to know what are my options as far as alcoholic beverages, I know Beer is out, What Do I drink??? After my hospitalization over the Utz potato chip fiasco, I refuse to eat or use anything processed without calling about it first. My first call was about Chapstick. They told me that they are currently trying to obtain some sort of certification from every one of their suppliers to validate that their product is gluten free, but as yet, they cannot confirm that there is no gluten in their products. The following is an email that I sent to Utz this evening after having suffered terribly all day in the emergency room of my local hospital. I bought this "gluten free food" because there was no warning of cross-contamination. Boy will that teach me not to trust labels and to ALWAYS do my homework before consuming any processed product. I think I got glutened yesterday. Beats me as to how. Breakfast was completely fine -aside from the crumbs in the toaster, which might have done it though it never has before. (I'm the only one gluten free in our house, and since we don't have a whole lot of extra money with ten kids, we only have one toaster.) A Gluten Freedom Dough Sheet Recipe Here is a fantastic recipe for gluten-free pasta dough sheets. I make this recipe all the time because it is so versatile. I use it for raviolis, wontons, Peking dumplings (potstickers), and it is great for crab rangoons as well! Well, after gathering some info from the experts in the forums, I concluded a while ago that I was soy intolerant. Two days ago I completely got off it. The reason I didn't do it sooner is that I had a whole bunch of teas from Christmas that had soy in them...so I finished that and then completely went off soy. This yeast dough is great for pizza and for cinnamon rolls. It cooks up a little heavy as a loaf of bread, but is still tasty! Nothing presently in my diet was mentioned in the article, but it does bring up the obvious point that my diet would naturally affect the health and wellness of the hookworms that live in my gut. Something to think about.

Yes, there are several gluten-free certifications out there (one is the GFCO), and the usual standard they claim is 10ppm, however, recent findings indicate that even the GFCO's higher standards may not ensure that foods they certify are gluten-free:
