A New Diagnosis

I was diagnosed with Celiacs disease about a month ago and its amazing to me what a huge change this is. No more just grabbing any kind of food to eat. It has been a struggle and I need all the help and support that I can get. Im married but I dont have any kids. My husband is very supportive but has not gone gluten free, nor do I expect him too. One of the hardest things for me is figuring out what to eat when Im short on time. I work full time during the day and go to school three nights a week. After work I have enough time to run home, take out the dogs, and grab a quick something to eat before I have to be in class. I got used to being able to get fast food or a bowl of cereal. That doesnt work anymore, unless Im eating corn chex. :)

The other part that Im dealing with is where to shop and how to keep it in my budget. In Minnesota the two big grocery stores are Cub and Rainbow Foods or Walmart and Target Supercenters. Cub, although it has a decent sized organic section didnt have too many gluten free options. Neither does Target. People in my area have told me about Traders Joes or Whole Foods so Im going to check those out this weekend.

Anyway I would welcome any suggestions or ideas that anyone has. And I also like to hear stories about how other people have and are coping with gluten intolerance or celiac disease. Or any other food allergy for that matter. Please feel free to also contact me by email or on yahoo messenger.

You are right, corn chex are not gluten free. Its rice chex that Ive been eating.

You have another cereal alternative...Cocoa Pebbles. I have read and re-read the label and Post's website and they make you aware if there is a gluten containing source for their ingredients. I have not had any problem eating the cereal and I am quite sensitive. Unfortunately the "store varieties" contain malt but the name brand Cocoa Pebbles is safe for us Celiac's as far as I can find. I don't believe Corn Chex is gluten free. Rice Chex is. Make sure to check the box as it will actually say gluten free on it. I eat Cocoa Pebbles too. Fruity Pebbles are also gluten free. There are about 3 different EnviroKids cereals that are gluten free.

Do you like beans? Most of Bush beans are gluten free. Not the chili though. Bush Beans lists on their website their gluten free products. There is also a website that lists brands that do not hide gluten: www.glutenfreeindy.com. Not all of their products are gluten free, but they will declare it on the label if there is gluten. This list has helped me the most. Also, if you have a crockpot, there is a website, I can't remember the name. I'll look it up and let you know. It's something like www.crockpot365blog.com. Actually, do a search on the forum and it should come up. If it doesn't and you want it, let me know.

I love the Lundberg Risotto, especially the parmesan one. It takes a little while to cook, but you will have some leftovers for another meal. Bake some chicken breasts to go with it. My hubby, who is not gluten-free loves it!

I have been gluten free (with a few slip ups) for about a week and a half. Offhand, I eat Rice Chex but you might want to take the milk out of your diet for a while while your body heals, Rice Dream is a good alternative, and I know Classico sauces are gluten free (of course you will need to find some gluten free pasta). Oh, another place I have here in Louisiana that has a pretty good selection is Krogers if you have one of those stores near you. The best thing I could tell you is to take a day and make the time to do some research or you will keep getting glutenized (as me and my twin call it) over and over. I understand you are busy but this is for the rest of your life. The consequences can be rough if you don't. Before I knew I had celiac disease, I miscarried 5 times. I am thankful so much that I have time to heal and still hopefully God willing have children.
