I usually whip up a big pot of white sushi rice/ or just white rice (sushi rice is sweeter and stickier which will last long through out the day). Then I add my meat (which is usually tuna steak or salmon because of it's higher fat content and sweet meat flavor), then add a bunch of vegies like bokchoy, collard greens, bell peppers, mushrooms, and I dry and grind up ginger root for a spice (I moren than just ginger for home dried spices) but it's a good meal that comes in big portions and can be tupperwared and brought with you in a little cooler with ice.

I know how you feel, I can eat a fridge full but havn't gained weight but the hypoglycemia and celiac are combating each other rather irrationally. I'm not pregnant but you are eating for two, so this list of foods that help me make it will help you make it too. Hope this is inspiring. :D

hey, I faced the same problem, although I had already been diagnosed for a year before I was pregnant. Its the cravings that are a killer. You do need to get on the cooking in large amounts. I am a freezer queen. I will make enough dinner for myself hubby and for lunch the next day. I blanch and freeze vegies, if you get in the habbit of preparing in quantities and freezing it becomes easier, when you are in a rush. And its a way to pure your vegies and freeze them for babyfood. Vegies are very filling and good nutritious, drink lots of water with your meals you will be more filled. A fish a can of tuna can be a life saver in a crunch and the omega 369 fats will keep you sharp durring the pregnancy duhs you will get.
I wish you all the best, its a tough road especially raising a baby with Celiacs, the challenge continues...

Hi,

Try frozen meals. You can buy it at Market basket, Shaws or Hannaford. Most stores have them in the regular frozen foos section or the naturel foods freezer. Amy's have very tasty portions. They are not cheap but a great thing to have in your freezer for does moments when you need to grab something in 2 minutes!! While I worked they wore a great thing to have in the house and during my pragnancy it was a life saver!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!

SAve up on gluten free snacks as well, and what I learned that you should prepare food in advance before you get hungry. Don't wait until your stomach sends a signal!!

wishing all the best to you.
