I've Been Glutened! Aaah...

I'm not sure how this happened...

But all of you who are the 'only one's in your family who are gluten free can relate.

I think it was the chicken dish my Mom made yesterday. There were plenty of leftovers (enough to fill a large sour cream container), and I'm think that some gluten stuffed-stuffing got mixed in. Today was leftovers (or srevotfel, shre-vot-full) day, and the only thing I could have was -you guessed it -the chicken dish. It was 'safe' originally, but the thing that clued me in was the taste of stuffing in some areas of it. (I HATE stuffing.) Ever since then I've had really bad gas and burps, and a headache -the first I've had in months.

What's really annoying is that my family can't sympathize, so I just end up not telling them what happened. Everybody's like, "A little won't hurt you", but they don't get that ANY AT ALL is bad.

The one thing I see in this that's good is that my body no longer recognizes gluten as part of the norm, so it's a good sign that I haven't had too much cross contamination. I know that I must have had some, as a lot of things I eat have to be prepared around gluten (in the kitchen just about everything has contained gluten at one point in time and will again).

Well, for now I'm just hoping that this doesn't keep up for too long! If anyone has any tips on avoiding getting glutened in situations like this, they would be welcome...
