Buckwheat Muffins

Okay so I bombed out on the muffins tonight. It's a really bad sign when even your very polite, gluten free supporting in-laws say that, "everything else tastes so good I just don't have room for a muffin."

It all started out so inocently. I was minding my own business in the whole food section of the grocery store when I noticed a bag of buckwheat flour. I thought to myself, "Wait, isn't buckwheat one of those naturally gluten free flours that they make pancakes out of and sell them at Cracker Barrell?" If they actually sell food made from buckwheat then it must be good! It even had a buckwheat/corn bread muffin mix on the back. I was sooooo excited and had illusions of granduer racing through my mind. I imagined the awe and applause that evening where my husband would warmly smile at me across the dinner table praising my valiant efforts to bring him the lightest fluffiest gluten free muffins ever created. That I was exactly what Proverbs 31 was describing when he went on about the wife of noble character in the Bible. Bla Bla Bla.

They turned out to be this grayish, tastless looking bread that I tried to make excuses for throught the meal. Like, "Here try it with some honey....it's better with honey....well, maybe it would be a good base for something else. The texture is lighter than all the ohter gluten free breads don't you think?" Needless to say I hope to have better luck with the pancakes.
