Please Help Me!

So this is my first time every blogging and i'm not sure how it works but i'm going to try my best. I'm fifteen years old and i've had the symptoms of celiac disease for almost four years now!I don't have celiac disease but i have an exremely high allergic reaction to gluten. Because of this, the docotrs couldn't diagnose me, but my mom and i figured it out for ourselves last summer. Now, i've been trying to stick to the diet and i really have been, but gluten keeps sneaking in! Of course, i haven't eatent he obvious things like bread and pasta, but the small things are killing my diet. i never realize soy sauce or certain types of mayo have gluten until i've finished my meal, and then the symptoms last forever! One mistake can affect me for a month or more and this has been a never ending cycle for about nine months now. I have barely seen any results, and if i have they last for a few days. Do reactions usually last that long? Any advice? Because i'm so discouraged and i feel like all my efforts are useless!
