It is now the middle of May. Where does the time go? I have been trying to read as much as I can, and although I am not able to read much, I have found some interesting pieces of information from Dr. Green's book Celiac Disease; a Hidden Epidemic. Apparently the tip of the villa in the small intestine is where the enzymes are that break down milk proteins and since this is the part of the intestine that gets damaged first, this is why individuals with Celiac are not able to process lactose. It states that a good gauge for time frame is about 6 months of no dairy of any kind, (and as complete a gluten free diet as you can manage) then you can start to slowly introduce dairy back into the diet and see how the body manages.

I am currently at 2 weeks of no dairy. I have found some fabulous goat cheese that tastes just as much like cheddar as I never thought it would, and I am back to enjoying feta made from goat's milk. From all my research, goat's milk does not have the same proteins as cow's milk and thus it is ok. I have gone to soy milk for my lattes in the morning. 2 weeks and counting... :huh:

I have also eliminated night shades, no tomatoes, peppers of any kind (sweet or hot), eggplant (which was not a stretch, it was one veggie I really didn't eat anyway) and potatoes. I will admit that I have a Carl's Jr. close by work and I get fries with my "low carb" burger, but I won't eat the whole container. I keep eating fewer and fewer.....and I don't always order them!

Oh, something else that Dr. Green and his fellow authors wrote was that 'damaged' food can also cause an uprising. My interpretation of that was to not have leftovers past 1 day (micro organisms grow very quickly once prepared foods are exposed to the elements) and cut off any "bad" spots on your fruits and veggies and avoid eating them. Normal digesters may not have a problem with this, but our wonderfully damaged (in our many stages of repair hopefully) intestines cannot handle the increased activity of "rushing to fix it" and thus we have increased issues.

(I fully realize that some one may read this and shake their head repeating in their brain that I am a kook and how on earth did I get that from the book, but as I said that is how my brain digested it - pun intended - and thus how I remember to give my "tree offerings" a once over prior to enjoying nature's succulent morsels!) :P
