Another Day, Another Destiny
Well, I told my doctor about going gluten free and how good it makes me feel. She didn't say much, but she did essentially that I am gluten intolerant. Well, great. I'm official. Gluten intolerant. Strange, it sounds so weird to say I am officially diagnosed as gluten intolerant. I have an official diagnosis of fish intolerance too. Well, that's it. I'm crazy intolerant. Who knows what next will show up that I am intolerant to... Casein? Dairy in general? Who knows. But well, for now, I'm official. And you know what, it is almost a relief to know that it is an official diagnosis and not just something I determined for myself.

Now to continue tackling this diet. Guess what? I made cookies today! Gluten free ones too! I am utterly thrilled about it. Okay so maybe I haven't thrown them in the oven yet but it'll happen when I get home at least. But the "dough" is so delicious. And I feel good eatin it too, even though it is chocolate! Yes! Acid reflux, and gluten, oh how I hate you. But I certainly am enjoying my new found freedom.
Guess what else I am doing? I am getting rid of EVERYTHING containing gluten. We saved a couple things for my husband, (mostly the open stuff) but other than that, my house is DEVOID of gluten. I'll be giving the food that I have that is gluten filled to someone in my apartment complex who needs it. And then when I get paid on friday, I will be able to go on another shopping spree! WOOHOO!!!!!!!!! Off to Whole Foods again! I love it! *grin* Oh and I need to remember to get veggies too this time... I'm completely out.
