Getting Started On Gluten Free
Been feeling bad so long. Bones and muscles ache. Hands shake and head wobbles. Tired. Never enough sleep. GI trouble and GERD. And I've put on 5 pounds I can't shake.

After being brushed off once more by doctor who says all blood tests are normal.....I decide to try gluten free. After all, every time i eat anything made with wheat flour I need to take an anti-acid. Sometimes it works.
So, I decide one day to go cold turkey and give up wheat, rye, and barley. The hardest part is the french bread, sold, I hate to admit, by Wallyworld. It is sooooo good. Chewy and toothy and entirely emotionally satisfying.
But, surprisingly, i dont' miss it. Nor the apple cake I pull from the freezer to serve a guest. Nor anything made with wheat. This is not hard at all
.Day 1 I eat potatoes, greens, fruit, curried chicken.......which I make with arrowroot thickening.
Day 2, more of the same (I cook multiple servings of everything). I add dried fruits, almonds, pecans...my holiday stock of nuts will be gone in a short time! At the end of day two, my muscles don't ache. Bones don't hurt. Maybe I'm onto something!!! This is so encouraging.
Day 3 Homemade yogurt, potatoes, tomatoes, more chicken, nuts, and CHOCOLATE.
Day 4 Weight is coming off. Down three pounds. I'm told I look slimmer. No more bloat!
Day 5 Find celiac.com and feel like I've come home. My questions are answered. I know what to do about my doctor who prescribed pain meds for the body aches, and brushes off all my other concerns. First find another doctor, then give this one another chance to do right.....then....we'll see.....
I have a very ill relation who has had no satisfaction from years of medical investigation into her many ailments that she fears are MS. I forward her clips from celiac.com and suggest she join and read read read.....but will she? We'll see. It costs by the minute to be online, so she'll need to read fast and act fast.....we'll see.....which seems to be the mantra for my life lately.
