Roasted Veggies - As Per Suggested By Cyclinglady

This was a very simple recipe to make, and it doesn't bother me at all.

Celiac.com Sponsor (A13):
 

1 large sweet potato - chopped into large pieces

2 standard size Idaho Potatoes - chopped into large pieces

1 beet - chopped into large pieces

1 handful baby carrots (or 2 whole carrots. You can add more if you like, but I'm not a huge fan of roasted carrots)

Italian Seasoning

Salt

Garlic Powder

(I don't eat pepper much any more, but you can always add pepper too)

 

Preheat oven to 425. Place veggies on cookie sheet one layer thick. Sprinkle spices and olive oil over veggies. Cook for 40 minutes. Serve.

 

(Feeds 2 as a meal or 4-6 as a side)

Oh, sweet potatoes! I forgot. Good catch!

I season with dill, pepper and salt. Can't do garlic. Looking forward to making these at the end of October when this heat wave will end! Ha!

Maybe, I should just put the pan out on the sidewalk....

Haha I've thought about pan on the sidewalk. And yeah, I can't do garlic either, but light powder seems to be okay for me. Same with onion.

It didn't bother you....but was it yummy?

Oh my gosh, yes it was absolutely to die for!
