Gluten-Free Bread

Well, last night, hubby and I thought we'd treat ourselves to a little gluten-free bread. He had problems after eating it and I'm having issues today. Not leaving the house kind of issues. It's not something that is on my diet and I really didn't think a little gluten-free bread would bother me much. Oh well. Back to eating no grains? Or maybe just not gluten-free bread.

4/18: been having bad headaches for several days and have some inflammation. Did take a nice walk today and that's always a good sign.

It sounds like you will be able to test it much later when you feel like rocking the boat. Trouble is, if you are like me, you never want to rock the boat!

What a wild life I'm living taking a chance on GF bread!

Have you thought of trying paleo bread? It is grain free..it typically contains almond and/or coconut flour. You might be able to find some in the freezer section of one of the health stores near you! It's pricey at about $10.00 a loaf, but personally I like it a lot and if you're used to not eating bread, you can probably make it last awhile. Some gluten free bakeries might carry their own freshly made paleo bread as well. Or - if you feel up to making your own bread, you can play around with some homemade paleo recipes!

[/quote] Thank you :) I have been wondering what ingredients are used to make Paleo bread. I am currently intolerant to coconut (due to how much I ate of it while at the start of healing) but will keep this in mind as an option down the road!
