So I am just going to keep gluten-free and grain free recipes in this blog. I love to cook and since I have a severe and immediate reaction to gluten and corn and I just try and skip soy... I skip the grains. With the exception of rice. All of the things I list that have bread or pasta are made with rice flours. No corn or anything else. You are of course free to substitute whatever works for you. It has been my learning experience that anything a person can make with flour can also be made without it. In some cases, it is even better! I also generally skip buying anything pre-packaged, whether is says gluten-free or not. Its almost all from scratch. Yes it takes time. It relieves a bit of the extra expense though. It WILL cost more than the SAD (standard american diet) you may be used to but it will be OH SO HEALTHY. For the non-celiacs in my house, I will generally add those items as a side, such as regular bread or some store bought cake. I hate to do it thought because that cake is BAD juju even for the non celiac. I definitely do dairy, but as I said, ANYTHING can be substituted. If you cannot do dairy, sub the equivalent!
I will add the recipe and picture (if there is one) of whatever I am making. If it is a recipe I have adapted from somewhere, they will get the credit. Of course, there may even be a video to watch of the process! Just follow my modifications and you are golden!

Cooking can be a challenge if you've never really had to do it before, but it can also be a lot of fun! A bit of kitchen chemistry and you can eat better than many people who have no restrictions what so ever. You can invite them over and they may not even know! Now? I will get started on my first recipe post. Last nights dinner! WOO WOO!
