Chicken and Spiralized Carrot Noodle Soup
- 6 Large Carrots, into spiral noodles *
- 1 Large Onion, diced
- 3 Stalks of Celery, diced
- 2 ½ lb Boneless Skinless Chicken Thighs
- 8 cups Chicken Stock
- ½ cup of White Wine
- Salt and Pepper, to taste
- balsamic vinegar to taste
- 1 Tbsp of Poultry Seasoning (oregano, thyme, crushed rosemary, CHOPPED! I always use fresh herbs because quality is a thing!)
- 1 bunch fresh parsley, chopped
- ¼ cup of EVOO
- Stelline pasta**

Fill large pot or dutch oven with enough water to cover all the chicken pieces well. Bring to boil and cook for 15-20 minutes. Drain and reserve liquid, skim off any fat/scum with a spoon). Remove chicken to cutting board to cool, the shred with two forks. In the same pot, bring the EVOO up to temperature on medium heat. add the onion and celery, season with a little salt and cook the veggies over medium heat until they begin to cook down and develop some color, 7 to 8 minutes. Add the chicken, carrot noodles and reserved liquid back in and sprinkle over the poultry seasoning along with the wine and stock and bring to a boil. Partially cover the pot, reduce the heat to medium low and cook the mixture for about 45 minutes. Adjust taste with balsamic vinegar. Add the parsley and cook for a few minutes more. Serve with crunchy bread of your choice and butter.
*If you do not have a spiralizer machine, you can, of course, just cut your carrots on the bias into slices and cook them up along with the onions and celery.
* Stelline are the little tiny stars pasta. You can leave it in the box and anyone who does eat gluten in the house can add a big spoonful to their soup bowl and just wait 5 minutes while it self cooks in the hot liquid. This recipe has a LOT of chicken and carrot noodles so you won't feel deprived one little bit!
(If you're up to being crafty, you can adjust this to cook in the crock pot too)
