Eggs in Purgatory 2 Ways

Tonight we are indulging in some simple but fresh and delicious Italian fare. There are not a lot of ingredients so be sure to use the BEST ingredients. If you go for the 1st way, as I have this evening, be sure to find the darkest red tomatoes you can find. Actually use fresh basil and grate your own parmeggiano (or pecorino),

If you make it the second way, be sure you use San Marzano tomatoes. You CAN taste the difference and it is all worth it. Both ways are simple and simply magnificent. I will be leaving videos of people who do it exactly the way I do either way. So there will be no ingredient lists. Olive oil, fresh basil, onion, tomato, eggs (garlic if you like), and cheese. Easy Peasy
