The first time I tried this recipe was last night. I WAS FLOORED! It is such a good copy cat.. MY GOODNESS! I am still smiling. I used it to make a stuffed pepper stoup. But all of those things you can make with the canned stuff you can now make with this! Stuffed Cabbages baked in the pan for potlucks, family reunions etc.. or thrown in the crock pot! OH JOY!!! I do use a specific brand of tomatoes in a can, exclusively. They are named SAN MARZANO right on the can. You can use the sauce version OR the crushed tomato version and I think you could probably use the cheap store brand and it wouldn't matter. I would not, but you could! I will post a picture of them at the bottom.
- 2 28 oz. cans tomato sauce
- 1/2 cup water
- heaping 1/4 cup brown sugar
- 1 tsp. salt
- 1 tsp. tapioca starch
- 2 bay leaves
- dash ground black pepper
- heavy cream (if you try this with lactose free "dairy" product, let me know how it turned out!)
Combine all ingredients except for the bay leaves. Blend for several minutes, until very smooth and creamy. .Add Bay leaves and heat on med for 10-15 minutes, until the soup turns thick.
This is SO EASY! If I had a second freezer, and really I should get one, I would be making this stuff in batches and freezing it for on hand use, but it was so easy that it really takes no time at all.
and my tomatoes?? Here they are. I ❤️ them.
