Someone has it worse.....

I've been in a really bad place this week. I've struggled a lot with the Celiac diagnosis. I was doing better and then this week hit me like a ton of bricks.... I think because I officially transition to gluten-free on Monday..... I am scared. Scared of losing the convenience I'm used to. Scared of losing the food I'm used to and love. I don't care how it sounds.... I'm fat because I eat bad. I like bad food. I no longer will be able to eat that food. Not just for a short time-not just for a year-forever.

I look at #celiac on instagram and the food doesn't appeal to me. I love salads/fruits/veggies but I don't love all the other stuff I see pictured. I literally am terrified of having nothing to eat.

 

The cost of eating gluten-free is also astronomical. I'm putting my family in such a bind... we're struggling and I feel so much guilt.

 

So... I'm struggling but that wasn't the point of my message. My message was to say that I stumbled upon a story of a little girl who just passed away last month from DIPG (incurable brain cancer). It kills kids ages 5-9 usually.

 

I cannot even imagine.... It breaks my heart...it kills me inside...and it puts into prospective that while Celiac sucks for me... it'll be hard for me... it's not the worst thing in the world.

 

If my mom were here she would be amazingly supportive, she would hold my hand and hug me and promise to be there for me all along the way but when I sank too low and was too depressed she would say "Someone out there has it worse than you Chanda". And she would be right....

I know how you feel I struggle every day thinking I will never get the feel of moist cake or a chocolate chip cookie made with my mom secret recipe ever again. I was ... I guess still am an aspiring baker and now when I make things for people I have to be so careful not to get glutened.  I am not sure where you live but if you have an aldi's close by they have great gluten free things like pasta, cake mix, brownies (that are so good) and pizza crust mix. Also most candy is gluten fee my favorite peanutbutter m&m's.  I understand the stress on money and on family members.  It gets better and being without pain is worth the sacrifice.  Keep with it and things will get better. 2 Months gluten free.

I was a avid baker for years.  Heck, I even made my burger buns from scratch!  Cooking was okay, baking was fun!  I could whip out a pie in minutes!   You can make your old favorite recipes and have them turn out.  It just takes some experimenting.  All my baked goods are gluten free and my family and friends can not tell the difference.  Seriously!  I even make my old family yeast-based, rolled dough Kolacky's at Christmas.  Delicious!   My chocolate Mayonnaise cake is always in demand.  I like King Arthur's or Pamela's flour blends.  gluten-free items do not have a long shelf life so I freeze them.  I always have something on hand to take to a party for my family.    So, keep trying!

That is good to know the gluten-free flour is expensive and I am poor hopefully soon I can start baking with it.

Hi,

Its not so bad really! I really suggest that you don’t look for “normal food” gluten-free look alikes. Just make a break and put together a recipe list that suits you.  I have also cut out sugar (still have honey in coffee) and red meat. I feel so much better.

Look on Pinterest for paleo and gluten-free recipes. You’ll be surprised how good they are (and plentiful) and not expensive to make.

The main problems are getting rid of bread, cakes, pizza and pasta and then all the “other foods that include gluten like roasted peanuts, soy sauce, vegemite, marmite, beer, malt vinegar, baking powder etc.  Gluten free health food and junk food is hellishly expensive and probably no good for you anyway so stay away. Eating out is tough but doable.

i tend to live on curries and quinoa, sweet potato and rice with lots of vege and salad sides.  Each one lasts for about three meals. Having said don’t replace normal gluten foods, it’s a fact that we all save a lot of time and effort eating cereal and bread. It doesn’t have to be gluten based and I’ve come to realise that I don’t have to do without. Breakfast can be gluten-free cereal (rice quinoa sorghum) and chopped fruit with soy milk. I make really good gluten-free bread with about 3-4 different flours and lots of nuts (maybe 1/3 vol). Sesame, pumpkin, pinenuts, sunflower seeds. Even chia and flax seeds. Up to 20% of the mixture. I have home made tomato relish or hummus. If you’re ok with dairy, put cheese on top.

6 months and still trying to get it right!
