So considering a icecream machine for setting up at the market for awhile and doing catering, I tried a softserve machine and fell in love with the idea. But now after failing to raise the money for it and considering more issues with pros and cons I am opting to something a tad different. Biggest issues with the soft serve machine, the freezing cylinder has to have mix it to run properly, which leads to waste. And second it it limited to 1 flavor at a time in large batches at that. The benefits were a 60-80% puffing rate so I could get large amounts of profit out of it spending $26-28 in a 176oz batch and say selling it in $3 for a 2-3oz cone or $5 for a 4-5oz bowl.  But in the end I am going with something a bit more economical, less wasteful, and lets me do multiple flavors easier and not have to use a special mix but just flavored nut milks and juice.

Other thoughts going on I got some hemp powder, tested positive for gluten....sent to lab. Came back at 6ppm -_- SOOO I am using it anyway as it is below 20ppm. While I am not vomiting I am getting foggy, panic attacks, 2 mental break downs in a week, and super depressed thoughts. Also constantly dropping things, missing keys, and buttons typing and using my hands, tripping more, and other nerve issues. THANK GOD I almost used all of it (I just do not want to waste it)

While I do sometimes eat longhorn I get really sleepy when I do, this does not explain why chicken and turkey does the same though. Due to the meats coming out in my stool afterwards non digested I think it might have more to do with my enzymes and ablity to break down tough meats. Crab, and soft fish, baked seems to do pretty good, same with egg whites....who knows maybe god will explain it lol.

Food truck business plan is driving me bonkers, the math part and spread sheets are nuts. I keep trying to do them and the numbers keep rearranging themselves.......Yeah I am going to need a business partner do to this part of it. The planning is about done being officially written out and I am still waiting on the quote from the truck builders before going 100% live with the crowd funding and praying. I got support from my churches pastor when I told him my plans to use it to run a soup kitchen with the church and have support among some local gluten-free community members. A gluten free, ketogenic food truck looks and sounds great. I am really focusing the menu on items normally off limits to those on the diet. Bringing back pasta, pizza, breads, and stir fry to the diet. I think this will be a god send to those limited and unable to consume gluten and grains. Lets face it that in a food truck that is 100% dedicated gluten free, and ran by a chef with celiac disease......YES.

Do have someone you can trust, like a sister or parent, to help you keep the numbers straight?  Get them to help you now!  So many businesses don't get the numbers right in the beginning.  I know you are trying really hard and are pretty thorough.  I just want this to work for you ..... for my own selfish reasons ( more gluten-free options.....gluten-free taking over the world!....( insert evil laugh here)
