Snacks for "Yaks" - Specific Carbohydrate Diet Ideas

Are you anything like I was, addicted to starchy foods most of my adult life?

I could make an entire box of Wheat Thins disappear faster than David Copperfield.

Bars lost money when I dove into their pretzel bowls.

My kids knew if they asked me to babysit they would have to replenish their stock of Saltines, Triscuits, Cheese Ritz and Goldfish crackers the following day. I had to say goodbye to those forever. But hope and snacks spring eternal. A door closes, an oven opens!

By gosh I still nosh, but it's different snacks for us "Silly Yaks" ( a.k.a. celiacs).

Good Eats, Safe Treats
  • Stuffed Dates wrapped in sugar-free bacon and baked until bacon is crisp.
  • Cauliflower popcorn, pieces of cauliflower, tossed in oil and spices and baked until brown and crisp.
  • Fruit Leather- fruit pureed and spread on a cookie sheet until it firms up.
  • Crackers made of baked Goat Cheddar cheese.
  • Roll-ups using smoked salmon or roast beef and stuffed with any number of different fillings - I like French Goat Brie.
  • Nuts tossed in spices and roasted.
  • Granola made of nuts, dried fruits and dried unsweetened coconut.
  • Thin slices of Butternut squash or beets deep fried.
  • Fried Carrot Curls.
  • Sliced mushrooms tossed in oil and baked until crisp.
  • Smoked oysters.
  • Truffles made of dried fruits and nuts processed with the blank cone of my Omega juicer and rolled in coconut.
  • Specific Carbohydrate Diet Chicken Nuggets with Peanut Sauce.
  • Crackers made with nut flour.
  • Stuffed Mushrooms.
  • Sun Dried Tomatoes.
  • Chilled Shrimp dipped in Ramesco (Roasted red pepper dip).
  • Shrimps dipped in egg or homemade mayonnaise and unsweetened coconut and fried.
  • JK Gourmet's paper thin Biscotti with pistachios and dried fruit morsels.
  • Tiny Specific Carbohydrate Diet egg rolls.
  • Dill pickles.
  • Deviled Eggs.
  • Mini meatballs.
And there are more where these came from!

Interesting BUT a lot of the suggestions are VERY high in saturated fats. A lot of them are deep-fried to boot...

I am also a total carb-freak! The more I eat, the more I want - can't get enough! So I like some of the suggestions. However, I too would not deep fat fry anything! I got addicted to that as well and can never go there again! I gain 10 pounds real quickly! So I stick with snacks like almonds, dried fruit, dehydrated veggies and fruit as well as some of the baked items. Thanks for the ideas!

Thank you so much for the ideas. I am undiagnosed too but we ran allergy tests on my son and he is allergic to gluten along with rice, corn, soy, wheat, potato, dairy, eggs, peanuts and cocoa. We didn't need to test him for celiac because we know we both have it and now are eating a gluten free diet. He has started to grow now. His asthma is much better now as he is much healthier. Thank you for your blogs. It helps us new yaks to get through this life change.

How do you make the goat cheese "crackers?" I'm always looking for low Carbohydrate, gluten-free, nut free snacks. Good luck with that, right??! Thanks for your help!!
