Mothers Meat Loaf

So in a effort to make meat loafs I have gone through several versions with 3 I still do I use 2 cooking methods depending on time, I can cook normally in the oven in a meat loaf pan (made to drain the grease) Or I can use my instapot version and do it in smaller loafs each a bit over 1lb 2 at a time. First I will start with the one I often fix my parents I based it off my mothers recipe just subbed in almond flour for saltines and plain tomato sauce for ketchup. I will post my other versions later under Simple Meat Loaf
MOTHERS VERSION (2 large loafs or 4 small)
3lb super lean grass fed beef (Important or you will end up with a greasy mess)
1 Medium Onion, Chopped up Sauteed til tender, (Pulse in a food processor if you hate chunks)
2 minced garlic cloves
2 eggs
1 can Tomato Sauce (You can mix it up with Hunts seasoned versions)
1 tbsp Lea & Perry Worcestershire Sauce
1 1/2 tbsp Italian seasoning
1/2 Cup (60g) Almond Flour
1/2 tsp Black Pepper
1/2 tsp Paprika
1/4 tsp Salt

Oven Method
1. Preheat Oven 350F, and grease your Meat loaf pans this Makes 2 loafs
2. In a Large Bowl combine all ingredients and mix well, (I put on food service gloves and use a claw and twist mixing by hand)
3. Place in pans and bake for 1 hour or more til no longer pink
4. I remove and drain then top with Primal Kitchen ketchup or spicy ketchup, when serving

Insta Pot Method,
1. Put 1 cup of water and 1 tsp of dried thyme in the bottom of the liner, then place in the wire steam rack that comes with the pot.
2. In a Large Bowl combine all ingredients and mix well, (I put on food service gloves and use a claw and twist mixing by hand)
3. Lay out pan with some parchment paper and divide it out into 4 loafs Now take a square piece of foil and fold 4 times so it covers the wire rack in the insta pot,
4. Place 2 of the loafs on the foil and put the lid on setting the vent to SEAL, Now turn on pressure cook on High for 30 mins
5. After it is done let it sit 5 mins then vent top off insta pot with 1/3cup water and repeat for the other loafs.
