First Thoughts
Well, I am new to all this gluten free stuff. It is a little overwhelming. No, a lot overwhelming. I got my results from enterolab back on 2/27/07. I have been reading up on this and trying to decide what foods will be safe to eat. Was feeling pretty confident until I learned I am also casein sensitive. That throws a wrench into things. I LOVE cheese. Milk not so much or butter. But I know there is hidden milk in a lot of products. I am going "home" in a week, and can't ask my sister to do special things food wise when even I don't know what I am doing yet. And I am going to the doc end of March for a follow up appt. don't know if I'll even tell him about these results. But if I do and he wants to do blood test, I shouldn't give up gluten first. Why is this so hard? I believe after I actually start this new way of life (not a diet) it will be much easier than I am making it out to be right now.
