I love my carbs! I love toast, muffins, bagels with peanut butter and cereals (hot or cold). That is why I was so disappointment at my first venture into gluten free breads. Being new to the whole gluten free world I started off buying the frozen, pre-made loaves. The slices were all frozen together, so there I stood in my kitchen when I got home, chiselling bits of "bread" off this frozen loaf. <_< Toasted...not bad. Made a sandwich for lunch the next day. I was so looking forward to eating my turkey, lettuce and cucumber sandwich. As I picked up my sandwich and gazed at it lovingly, it started to crumble before my eyes. I quickly took a bite before the whole thing dissolved into a mass of crumbs, but too late. At that first bite, my sandwich fell apart. Luckily I put enough lettuce and cucumber in my salad that I quickly grabbed a bowl and converted my sandwich into a tossed salad with crumbly gluten free croutons.

No more loaves of bread from the frozen food section!! I ventured into buying mixed I could bake myself. They turned out a bit better and I can actually look forward to a sandwich now. I experimented and found muffin recipes and cookie recipes, so the Carb Diva in me can live again!!

 

I could use my new found diet as an excuse to eat more of the healthy carbs (fruit / vegetables, etc.) of which I already eat my fair share. But I love a piece of toast and jam with my cup of tea. I love having hot biscuits from the oven to munch on along side the big bowl of homemade vegetarian chili. And I realize that just because I can't eat gluten I don't have to give up all that stuff I love. I am going to keep experimenting, finding the things I like and discarding the things I don't like. :rolleyes:
