Rice Cookers Anyone?

Some time ago I bought a rice cooker. I love it, I can cook anything from omlettes to potatoes and onions to rice dishes. I downloaded a huge 79 page PDF file (apparently from Panasonic, because I can't find another author listed there) of rice cooker recipes that I'm finding are very easy to adapt to a gluten free diet. The only dishes I can find that seem to be hard are the ones that call for flour (bread, cookies, cakes, etc.) Of course y'all probably already know all this, but some of the recipes in this booklet look really, really good.

But you can find rice cooker recipes all over the net. For instance, here's a GREAT recipe that goes well with almost anything. This recipe comes from Sally Strackbein, but I usually end up adapting it by adding spices to the oil first, or using regular potatoes instead of the baby potatoes...

 

9 small potatoes (about the size of a golf ball) cut into 4ths

2 medium onions, peeled and cut into 1/2 inch chunks

2 T olive oil

3/4 cup of water

 

Put oil in rice cooker pan pan and turn cooker on to cook. Add potatoes and onions. Stir. When the cooker shuts down to warm, add water and stir. Turn the cooker back on to cook. Cover and leave alone. The rice cooker will shut down to warm when the water has cooked off. The potatoes should be done. If not, add a little more water and turn to cook again.

 

The rice cooker will set itself to warm when the water is gone. The potatoes will brown a little more if you just let them sit on warm for a while. The beauty of the rice cooker is that it won't burn rice, it won't burn pasta, it won't burn eggs. it will cook them, but not burn them, it is fantastic. I always thought that rice cookers were only for rice, but they're not. I love my rice cooker, it sits out on my countertop because I use it so much. Mind you, I love my slow cooker also, but my rice cooker is my absolute favorite. I can cook quick, easy meals with my rice cooker, or I can cook a chicken breast in my George Forman Grill and then make some fabulous sides with the rice cooker.
