Amazing Gluten Information

I am Ki-Ki, a 29 year-old college graduate. I am a teacher. I was diagnosed with Celiac's Disease, irritable bowel syndrome, auto-immune thyroiditis, and ulceritive colitis three years ago when I was still in college, (I was undiagnosed for nearly 2 years and almost dropped out of college from the pain of the symptoms.) As a teacher, I LOVE learning and reading. My family has tried to be very helpful with the disease and has given me tons of support and interestingly, information. I recently received 2 books from family members. The books are WONDERFUL! I would HIGHLY RECOMMEND these books to anyone who feels they may be gluten sensitive or gluten intolerant (THERE IS A DIFFERENCE & YOU DON'T HAVE TO HAVE CELIAC'S DISEASE TO BE GLUTEN SENSITIVE!!!) These 2 books talk about how gluten, in the last few centuries have become a MAJOR problem for not only human digestion, but our pet's digestion too!! Over the years, man has increased the amount of gluten in wheat products which causes many of us to become intollerant to gluten, and even more to become sensitive to gluten. The books also talk about other diseases that people suffer from that are often mis-diagnosed because doctors don't think of celiac's disease!! These diseases include: ARTHRITIS, ADD, ADHD, FIBROMYALGIA, OSTEOPOROSIS, the list goes on!! The books also discuss how behavior in children with Autisim, ADHD and ADD can drasticly improve on a Gluten-Free diet. Trust me, I am no "health-nut" but the information in these books finally made some sense to me about Gluten Intolerance (Celiac's disease) and Gluten sensitivity.

The books sound very interesting. I will see if they are available at the local public library. I have heard on more than one site, about the gluten being higher now in products. I have not tested positive for celiac. But, I have a very good doctor, who suspected the gluten sensitivity because of a lot of excessive stomach acid I have (ulcer that was not healing despite 2 medications) and also, have the joint pain in my elbows (which I thought just was from old age 44 >here) My doctor suggested I try out the gluten free diet to see it helped out the stomach. I've been 3 weeks gluten-free now. (Although, first week didn't count too good, I cheated at least once a day then, withdrawl cravings so on.) Anyhow, I was off the gluten for a week, and gave into the cravings >ate French bread. And 2 hours later, the whole stomach acid began again. So I knew then, the doc's assumption was correct.
Thanks again for the book titles. Yes, I agree with you that not all people develop into full celiac disease, and are just sensitive or intolerant.
