The University Of Maryland Center For Celiac Research (CFCR) was established as an impartial, non-profit organization to improve the lifestyle of Celiacs through scientific research. As many of you know, we are presently conducting a nationwide six center serological study to determine the prevalence of Celiac Disease in the United States.
Scott Adams’ call for "... a conference among the different Celiac organizations to reach an agreement on what is safe and what is not?" sound like a reasonable approach to at least beginning the discussions essential to resolving this very difficult problem. Ann Whelan, in her May-June issue of "Gluten-free Living" enclosed an insert entitled "Time to Act...Unite Now". Maybe this single issue is a good place to start.

Which one? Even the cheapest bread machine can make great gluten-free bread. The main factor is to choose a model that can be programmed for one rising cycle. Regal, Toastmaster (both of which have gluten-free recipes) and Zojirushi (Model V-20)are some brands that bake good gluten-free loaves. Call the Red Star Yeasts free line to ask which model numbers are currently in the marketplace: 1-800-4-CELIAC (1-800-423-5422), and ask for their free gluten-free recipe booklet.

(Celiac.com 04/10/2000) A study by Danish researchers that was published in the September issue of the American Journal of Gastroenterology concludes that treating women who have celiac disease before they become pregnant improves their birth outcomes. According to Dr. Bente Norgard and colleagues of the University of Aarhus, Denmark, Our study emphasizes the importance of encouraging fertile women to maintain a gluten-free diet once they have been diagnosed, because the time of establishing the diagnosis and subsequent treatment is the major predictor for a favorable birth outcome.
The Danish team examined the outcomes of 211 newborns from 127 women with celiac disease, and compared them to 1,260 births to women without celiac disease...

    Dear Michael,
I have been asked to comment on your reply to Bev Lewis about the absence of gluten (or the barley equivalent) in malt flavoring. I am a cereal chemist who is sometimes asked for advice in regard to the gluten proteins as they relate to celiac disease by celiac patient organizations. I have provided advice to Kellogg in the past in regard to safe processing of a rice cereal (Kenmei) in order to avoid contamination. Kenmei has since been discontinued by the company.
While it is possible that the malt flavoring you refer to is free of all harmful peptides, your statement that because the flavoring is a water wash of malt, it is free of gluten,...
