Celiac.com 08/30/2024 - Kristian Martin, the Head Brewer at Two Bays Brewing Co., has an extensive background in the brewing industry, which began during his time at Carwyn Cellars while studying Criminology at university. His passion for craft beer grew as he helped set up the bar and engaged in homebrewing, leading him to choose brewing over a potential PhD in Criminology. This decision marked the start of his brewing career, which is driven by his love for the creative and developmental aspects of brewing, as well as its historical connections and the community surrounding it.

    Building Expertise and Recognition

Before joining Two Bays, Martin served as Head Brewer at Mornington Peninsula Brewery, where he experienced significant career highlights, including the creation of innovative beers like Brain Squeeze, the Squid Series, and Old Pumping Station barrel-aged Imperial Stouts. His tenure at Mornington Peninsula Brewery honed his skills and deepened his appreciation for the brewing industry's historical and agricultural ties.

In 2020, Martin joined Two Bays Brewing Co., a dedicated gluten-free brewery. Initially, brewing gluten-free beer was considered a controversial move, but the perception has evolved positively. Martin and his team have worked diligently to establish Two Bays as a reputable name in the industry, earning accolades and awards. For instance, Two Bays Session Ale won Gold at the 2024 World Beer Cup and the Indies Trophy for Best Specialty Beer in 2023, competing against gluten-containing beers.

    Overcoming Challenges in Gluten-Free Brewing

Gluten-free brewing presents unique challenges, particularly in the realms of practical brewing and marketing. Martin acknowledges the significant learning curve involved, especially regarding enzymes and fermentation health, which are more straightforward when brewing with barley. Despite these obstacles, Martin believes that Two Bays has made groundbreaking advancements in the quality and accessibility of gluten-free beer, aligning with the broader industry's focus on "better for you" choices.

    The Future of Gluten-Free Beer

Two Bays Brewing Co. aims to push the boundaries of gluten-free brewing, overcoming commercial and flavor-related obstacles. The dedication and innovation of Martin and his team have positioned Two Bays as a leader in the gluten-free beer category, demonstrating that gluten-free beer can be both high-quality and flavorful.

Significance for Those with Celiac Disease

Two Bays Brewing Co. provides a range of options for those who need to avoid gluten but still want to enjoy craft beer. The brewery's success showcases that gluten-free beer can compete with traditional beers, offering hope and enjoyment to those with dietary restrictions.

Kristian Martin's journey and achievements at Two Bays Brewing Co. reflect the potential and growing respect for gluten-free beer within the craft brewing industry. His story underscores the importance of innovation, dedication, and a passion for brewing, paving the way for more inclusive and high-quality beer options.

Scott Adams was diagnosed with celiac disease in 1994, and, due to the nearly total lack of information available at that time, was forced to become an expert on the disease in order to recover. In 1995 he launched the site that later became Celiac.com to help as many people as possible with celiac disease get diagnosed so they can begin to live happy, healthy gluten-free lives.  He is co-author of the book Cereal Killers, and founder and publisher of the (formerly paper) newsletter Journal of Gluten Sensitivity. In 1998 he founded The Gluten-Free Mall which he sold in 2014. Celiac.com 10/14/2016 - It's almost October, and that means beer, or, at least it means Oktoberfest is near. And in so many ways, gluten-free beer lovers have never had it better, with dozens of selections now available commercially, and more on the way every month, it seems.
So grab a beer, and celebrate Oktoberfest. But before we get to the list of beer purveyors, let's quickly review some basics of gluten-free versus gluten removed.
Naturally Gluten-free Beers—Naturally gluten-free beers are made with all gluten-free source ingredients, and use grains like sorghum instead of barley. This is important to many people, especially those with high sensitivity, or the belief that gluten-removed beers may trigger celiac-related problems.

    Gluten-Free Beer Bratwurst
Celiac.com 10/20/2022 - With fall and football season upon us, the tailgate and the home viewing arena beckon. For those occasions, beer simmered bratwurst is a rite of passage. These bratwurst are simmered with onions in gluten-free beer for extra flavor, then finished up on the grill for a crispy, charred casing. Put them in gluten-free hot dog rolls and top them off with the tender onions, sauerkraut, and/or mustard. For a great side, serve them with German-style mustard potato salad.
    Ingredients
4 (12 ounce) cans gluten-free beer (and ale or dark beer works great) 1 large onion, thinly sliced 10 gluten-free bratwurst 2 teaspoons red pepper flakes 1 teaspoon garlic powder 1 teaspoon salt ½ teaspoon ground black pepper Combine ...

    Gluten-Free Beer: A Reality?
Celiac.com 03/04/2023 - Being diagnosed as a celiac is always a bittersweet moment. On one hand, we are relieved to finally be able to point to the cause of our long-winded illness. On the other hand, we are inundated (or not) with information about the foods that we can no longer eat. For many of us finding out that we can no longer drink beer is quite a shock. Granted, good gluten-free bread seems to top the list of the most requested gluten-free products, and there are now satisfactory substitutes. When it comes to beer, however, there are no substitutes. Yes, we can drink wine and some other alcoholic beverages, but beer has always had a place in the hearts of the millions. Can you really drink a glass of wine while watching a ballgame or eating a pizza? We think not.
