    Avocado Heirloom Tomato Salad (Gluten-Free)

    Here's a great avocado tomato salad to wing into fall.

    Make this delicious salad while you can still get the last heirloom tomatoes and a few good avocados.

    Ingredients:

    • 1 avocado, peeled, sliced
    • 1 ripe heirloom tomato, sliced
    • ⅓ cup crumbled feta cheese
    • dash of chopped fresh chives or minced green onions
    • splash of basaltic vinegar
    • pinch of coarse salt
    • black pepper, as desired

    Directions:
    Arrange slices of avocado and tomato on a plate.

    Top with vinegar, coarse salt, crumbled feta, and chives, in that order.

    Serve immediately.

    This recipe comes to us from Tiffany (“tarnalberry” in the Open Original Shared Link). Ingredients:
    1/3 pound cooked salad shrimp
    1 small avocado
    1 cup pearl or cherry tomatoes
    3 tablespoons lemon juice
    4-5 large red leaf lettuce leaves or 2 cups shredded spinach
    Directions:
    Rinse lettuce or spinach leaves, and chop into strips, and spin dry in a salad spinner. Chop tomatoes into halves or quarters. Peel and seed the avocado, mashing thoroughly with lemon juice. Arrange lettuce on a large plate, top with tomatoes, then shrimp, then dollop avocado dressing evenly over the plate.

    1 cup quinoa
    3 large celery stalks, thinly sliced
    1 pint cherry tomatoes, halved
    3-4 radishes, thinly sliced
    ½ red onion, diced
    ¼ cup fresh dill, chopped
    1 cup crumbled feta cheese
    ¼ cup balsamic vinegar
    ½ cup olive oil
    2 cups water
    Salt and pepper to taste

    Recently, I've learned to love the lowly beet. The beet is a rich, earthy wonder. Served chilled in a salad, beets make the perfect summertime delight. This intense beet salad is accented with blood oranges, mint and feta cheese, makes a truly bold statement. Served over mixed greens, it is sure to delight your guests.
    Ingredients:
    6 medium beets
    4 tablespoons extra-virgin olive oil
    1 teaspoon salt
    1/2 teaspoon freshly ground pepper
    5 blood oranges, peeled, cut into1/4-inch-thick slices
    1 cup pomegranate seeds (from one 11-ounce pomegranate)
    1 tablespoon fresh lemon juice
    1 tablespoon finely chopped shallots
    1 teaspoon red wine vinegar
    1/2 cup feta cheese, crumbled
    12 mint leaves, sliced thin on the bias
    1 medium red onion, thinly sliced

    The fall harvest means the markets are packed with lots of juicy and delicious squash varieties. One of my favorite ways to enjoy the rich, earthy flavor of squash is in a rich, creamy squash soup. For that, I like to use the fabulous butternut squash. This soup is easy to make, hearty, nourishing, and delicious. It is wonderful fresh off the stove, or you can make it ahead of time and freeze it for later.
    Ingredients:
    2 pounds butternut squash, peeled, split lengthwise, seeded, and cut into 2x2-inch chunks
    2 tablespoons extra-virgin olive oil
    2 Granny Smith, Braeburn, or Golden Delicious apples, cored and split in half lengthwise
    1 quart gluten-free chicken broth
    ½ cup heavy cream
