    Banana Nut Bread #3 (Gluten-Free)

    Reviewed and edited by a celiac disease expert.

    Ingredients:
    1 stick margarine or butter, softened
    3 large bananas, very ripe
    2 cups rice flour
    1 cup sugar
    1 cup pecans, finely chopped
    2 eggs
    2 teaspoon gluten-free baking powder
    1 teaspoon gluten-free vanilla

    Directions:
    In large bowl, cream butter and sugar. Beat in eggs, vanilla, and bananas. In separate bowl, stir and mix flour and baking powder. Combine this with the banana mixture until all dry ingredients are moist. Stir in pecans. Turn batter into 5" x 9" loaf pan. Bake @ 325F for about 1 hour and 20 minutes.

    This is the first banana bread recipe I've tried that is wonderful! Not soggy or gummy! Thanks!

    Why are u saying gluten-free vanilla, as vanilla is gluten-free? Also, I see that everyone is getting in on the cash cow... things in the gluten-free aisles in the stores have lots of items that say gluten-free that never contained gluten in the first place. What a ripoff... and the price is just unbelievable. Give me a break..

    Made this recipe last night... best ever... liked it better than the regular recipe. Looking for more recipes by you, hopefully as good as this one.

    Not all vanillas are gluten free. It doesn't have to have flour to contain gluten.

    Can you use Gluten Free flour instead of the rice flour? Sorry I'm new to the celiac world.

    This recipes comes to us from Kathy Scholz.
    In a small bowl combine:
    ½ cup warm water
    2 teaspoons sugar
    4 teaspoons dry yeast granules
    Set aside and let stand for 15 minutes
    2 cups white rice flour
    2 cups tapioca flour
    ¼ cup sugar
    4 teaspoons xanthan gum
    2/3 cup dry milk
    1 ½ teaspoons salt
    Combine the above six ingredients in a large bowl (use largest mixing bowl).
    1 ½ cups water
    4 tablespoons melted butter or oil
    1 teaspoon gluten-free vinegar
    3 eggs

    From several recipes, I have put together my own recipe for Gluten-free white bread. It is a white rice, tapioca, corn and yeast bread that is very spongy and a wonderful breakfast and lunch bread. Would love to hear from others who have experimented with different bread recipes and bread machines. Hope you enjoy it and write back.
    Dry Ingredients (Mix in a bowl):
    2 cups white rice flour
    1 cup tapioca flour
    ½ cup corn starch
    2/3 cup powdered dry milk
    ½ cup Sugar
    1 tablespoons xanthan gum
    2 packets dry yeast
    1 ½ teaspoons salt
    Liquid (Mix Separately in another bowl):
    4 eggs beaten lightly
    1 ½ cups warm Water
    ¼ cup Corn Oil
    1 Teaspoon Cider Vinegar
    Add Liquid to m...

    ½ cup dark brown sugar
    ¾ stick butter, softened, creamed
    1 cup un-sulfured molasses
    2 cups Gluten Free Flour Mix
    ½ teaspoon soda
    1 ½ teaspoon ginger
    ½ teaspoon cinnamon
    Dash pumpkin pie spice mix (ginger, cinnamon, nutmeg, cloves)
    1/3 cup buttermilk
    1/3 cup milk 2%
    1 egg
    Mix with a fork or whisk, might need tiny bit more milk, should be like a cake mix. Pour into loaf pan and bake at 350F for about one hour.

    Ingredients:
    4 teaspoons flax meal
    3 ½ teaspoons xanthan gum
    1 cup water
    1 teaspoon egg replacer (powdered form)
    1 cup brown rice flour
    1 teaspoons salt
    ½ cup sorghum or garfava flour
    1 ½ teaspoon sugar
    ½ cup tapioca starch
    2 packages dry gluten free yeast (~4 ½ teaspoons)
    ¼ cup stone ground corn meal
    1 teaspoons cider vinegar
    ¾ cup potato starch [flour]
    1 ¼ - 2 cups warm water (105F – 110F)
    2/3 cup powdered milk (still in powder form)
    Olive oil
    Directions:
    Prepare flax meal: Whisk flax meal and 1 cup water in a small saucepan. Bring to boil; simmer for about 5 minutes; stir occasionally. The mixture will become slightly thicker. Set aside.
