    Cashew Cumin Roasted Fennel Snacks (Gluten-Free) -

    This recipe makes a great, healthy snack that is perfect to tide you over between meals!

    Gluten-Free and Vegan

    Serves 4

    Cashew Cumin Roasted Fennel Snacks (Gluten-Free)Ingredients:

    • 4 large fennel bulbs, sliced into 1/2 inch pieces, reserving fronds
    • 2 Tbsp. olive oil
    • Juice of 1 lemon
    • 1/2 tsp. lemon zest
    • 1 cup ground cashews
    • 2 tsp. cumin
    • 1/4 tsp. sea salt

    Directions:

    1. Preheat oven to 375 degrees F.
    2. Lay fennel fronds in a large baking dish lined with tin foil; top with fennel bulb pieces.  Sprinkle with olive oil, lemon juice, lemon zest, cashews, cumin and sea salt.
    3. Bake for 25-30 minutes or until golden brown.
    4. Remove from oven; set aside to cool for 2 minutes before serving.
    5. Serve warm with a dollop of hummus, guacamole or salsa.
    6. Enjoy.

    1 can of artichoke hearts (9 oz.)
    2 tablespoons butter
    1 large Spanish onion (diced)

    Preheat oven to 300F degrees. Bring to a boil: 1/3 cup fireweed honey and 1/3 cup sunflower oil and one teaspoon of gluten free vanilla or almond flavoring and a dash of salt.
    Meanwhile in large bowl add your choice of the following to equal about 5 cups of the following mix:
    1 ½ cups rice flakes
    ½ cup buckwheat flakes
    ¾ cup sweetened medium coconut
    1 cup slivered almonds
    ¾ cup sunflower seeds
    ¼ flax seeds
    ¼ cup sesame seeds
    ¾ cup pumpkin seeds
    Stir mix till thoroughly blended. Put mix in a 13 x 9 baking pan and pour cooled honey and oil mixture over. Stir to coat mix. Bake in oven for 30 minutes. (Granola will darken after removal from oven. Cool for 15 minutes and add ¾ cup dried cranberries and 2/3...

    4-5 strips thick-cut bacon
    1 tablespoon butter
    1 small onion, diced
    2 cloves garlic, chopped
    1 ounce blue cheese crumbles

    Heat a large skillet over medium-high and cook bacon until crispy. Remove and let drain on a paper towel-lined plate.

    Roasted Sunflower Fennel Crisps (Gluten-Free)
    This gluten-free recipe can be served with your favorite dip, or just eaten by itself!

    Gluten-Free and Vegan
    Serves 4
    Ingredients:
    4 bulbs fresh fennel 1/4 tsp. sea salt 1 clove garlic, minced 1/3 cup freshly squeezed orange juice 1/2 tsp. apple cider vinegar 1/4 tsp. orange zest
    1/3 cup sunflower seeds, finely ground Directions:
    Pre-heat oven to 350 degrees F. Slice fennel bulb lengthwise to create disk-like slices. Prepare a baking sheet with parchment paper.  Sprinkle with sea salt and minced garlic, then drizzle with fresh  juice and vinegar.  Top with orange zest and ground sunflower seeds.
    Bake for 30 minutes or until crispy.
