Cold Buffalo Chicken Wing Salad (Gluten-Free)

Reviewed and edited by a celiac disease expert.

Celiac.com 06/16/2015 - A cool fresh green salad is one of my favorite things to eat on a hot day. If I'm lucky enough to have leftover chicken wings in the fridge, then I make this tasty little treat.

Photo: CC: GinnyYou can make the wings according to these recipes, or use your own.

The basic idea is to marry chicken wings with fresh crisp lettuce, and some blue cheese dressing, and have a culinary blast!

    Ingredients:

    • 10-12 Buffalo chicken wings, cooked and cold
    • Lettuce
    • Tomato
    • Cucumber
    • Other salad ingredients of choice
    • blues cheese dressing
    • Koser salt
    • black pepper to taste

    Directions:
Make a fresh green salad with ingredients of choice.

Top with cold buffalo-style chicken wings. Or, you may remmove them meat from the wings first, if you like.

    Add blue cheese dressing.

    Enjoy!

Cook IT Allergy Free iPhone, iPad and iTouch Application for Your Gluten-Free Recipes
If you are allergic to gluten, dairy, eggs, or nuts, Cook IT Allergy Free is the iPhone application for you.  It currently has over 200 step by step easy to follow gluten-free recipes that clearly mark other allergens in red.  Any ingredient that is listed in red can easily be swapped out with a correctly calculated allergen safe substitution meant to work for that particular recipe.  With a quick tap, I was able to customize a recipe and could share it with others and save it to my “recipe box”.  I was also able to add my own notes to each recipe.
Shopping for products is also simplified with the “grocery list”.  All I had to do was save my recipes to my grocery list and “ta-da” all the ingredients I need for each recipe is listed.  This also includes any substitutions that I made for an...

    Gluten-Free Passover Cookbook
Celiac.com 03/09/2012 - I just discovered a gluten free Kosher (for Passover) Cookbook that is primarily based for those who follow Ashkenazi traditions.  It has over 90 gluten-free passover recipes and is the first recipe book that I have found to be kosher as well as gluten-free.  The content of this book ranges from appetizers to main dishes, including vegetarian meals.  I really liked that most of the recipes have a "variation" at the end of the section which allows you to change the recipe based on dietary requirements and taste preference.  It could only be improved by adding "gluten-free" to certain ingredients that are used in some of the recipes.

The Coffeecake Connection's Gluten-Free Traditional Mini Cake-a-lette Variety 4 Pack
Celiac.com 10/14/2013 - I once read that coffeecake is a great excuse to eat cake in the morning, and I'd have to agree! With mini-cake-a-lettes from The Coffeecake Company, you can have your cake and eat it too. These are some of the best gluten-free coffee cakes around. Buttermilk makes these cakes fresh, moist and delicate you'll want to savor every bite.
The sampler pack of the mini "cake-a-lettes" comes in 4 different flavors. The Signature coffee cake is your traditional coffee cake flavor, but the melt in your mouth texture makes it so you'd never know it is gluten-free. The Triple Berry Coffee Cake is a fruit-lovers dream containing boysenberry, raspberry, and blueberry flavors. The Cinnamon Swirl Coffee Cake is a little on the sweet side, but still very tasty due to the f...

TruJoy Organic Original Fruit Chews and Choco Chews (Gluten-Free)
When I first put an orange flavored TruJoy Organic Original Fruit Chew in my mouth and began chewing, I soon noticed an intense explosion of orange flavor. It reminded me a bit of the Starburst candies that I used to eat as a child—but instead of containing corn syrup and artificial junk—these chews are organic and contain real fruit juice and cane sugar.
Open Original Shared LinkThe texture and chewiness was great, and it seemed to last forever. Other flavors in the package included strawberry, cherry and lemon, and each of them was just as wonderful and intense as the orange.
I also got a bag of TruJoy Organic Choco Chews, and again, when I put one in my mouth and chewed it I was brought back to an old favorite of mine called a Tootsie Roll, but like the Organic Fruit Che...
