    Crunchy Gluten-free Fish Sticks with Tangy Dipping Sauce

    Celiac.com 02/16/2016 - Whether for a special treat for kids or as a special snack for grown-ups, these DIY fish sticks are baked for a more nutritious alternative to frying, and sure to please.

    • 1½ pounds fresh tilapia, or other firm white fish fillets
    • 1 cup Rice Chex cereal, finely crushed
    • 1 fresh egg
    • 1 tablespoon olive oil
    • 1 teaspoon paprika
    • ¼ cup finely chopped fresh flat-leaf parsley
    • ½ cup light mayonnaise
    • 2 small dill pickles
    • 2 teaspoon whole-grain mustard
    • Lemon wedges
    • Kosher salt and black pepper

    Directions:
    Heat the oven to 425 degrees F.

    Line a baking sheet with nonstick foil.

    In a shallow bowl, combine the crushed Rice Chex, oil, paprika, half the parsley, ½ teaspoon salt, and ¼ teaspoon black pepper.

    Crack egg into a separate bowl and whisk.

    Cut the tilapia diagonally into 1½-inch-thick strips.

    Coat fish in egg, then cover with Chex crumb mixture, pressing gently to help it adhere.

    Transfer to the prepared baking sheet and cook until golden brown and opaque throughout, 8 to 10 minutes.

    While the fish is cooking, in a medium bowl, combine the mayonnaise, pickles, mustard, and remaining parsley.

    Serve the fish with the dipping sauce and lemon wedges.

    2 cup rice flour
    ½ tablespoon paprika
    ¼ tablespoon cayenne
    2 tablespoon white sesame seeds
    1 quart cold soda water
    4 single chicken breasts-cut into strips
    Salt to taste
    In a bowl, mix together the flour, paprika, cayenne and sesame seeds. Whisk in the soda until a pancake batter consistency is achieved. Dip the chicken fingers individually in the batter and fry until golden brown, about 5 minutes. Season with salt.

    2 cups gluten-free white bread (crusts removed) I use the recipe from Betty H. for cornstarch bread - its wonderful + extra 2 eggs
    Crumbled smoked bacon (leave it out if you like)
    1/8 teaspoons cayenne
    ¼ teaspoons dry mustard
    2 - 3 Tbsp cream
    2 teaspoons lemon juice
    ¼ teaspoons Cajun spice
    salt
    pepper
    Mix above in food processor until well blended. Put in bowl and add 2 cups picked over crab meat and fold together. If too dry, add a little cream; if too moist add a few more bread crumbs Make into patties and roll in dried bread crumbs - fry in oil until brown. Drain on paper towels.

    This recipe comes to us from Lisa Wicklund.
    1 large onion peeled and sliced
    2 cups of Sylvan Border General Purpose Flour or other gluten-free flour recipe
    Milk (or substitute) added to make a thin batter. Pour slowly until you reach a consistency that is not too thin nor too thick
    Salt and Pepper to taste
    1 egg
    1 teaspoon of gluten-free Baking Powder
    Get gluten-free oil hot in skillet pan and add onion/coated mixture to pan. Fry until golden brown.

    There is little difference between the regular ones and gluten-free. You can add your own seasonings and make some real gourmet onion rings. This is what can be fun about this diet.

    Chop fine one cabbage, salt and let sit for an hour then rinse salt off, and dry thoroughly
    Dressing:
    1 cup gluten-free mayonnaise
    ½ cup sugar
    ½ cup cider vinegar
    ½ teaspoon grated fresh ginger
    Salt and pepper to taste
    Optional: 1 cup of gluten-free sour cream to dressing
