    This recipe is makes a wonderful summer drink for the kids, or for a pool party!

    Cucumber Mint Juice (Gluten-Free)Ingredients:
    • 2 large English cucumbers
    • 1 head of Romaine lettuce
    • Juice of 1 fresh lemon
    • 1 cup fresh watercress
    • 1/4 cup fresh mint leaves
    • 1 inch slice of fresh ginger
    • Pinch of cayenne pepper
    • 2 Tbsp. ground flax seeds, for serving
    Instructions:
    1. In a juicer, juice all ingredients except flax seeds into a tall glass. Top with 2 Tbsp. of ground flax seeds.
    2. Serve immediately.

    Fall mean apples and apples mean joy. Fresh homemade applesauce is one of my favorite ways to partake in that joy. This recipe is easy to make, and delicious. I put this applesauce on ice-cream, pancakes, waffles, peanut butter sandwiches, and many other things. I prefer to warm it up just a bit, but this easy homemade applesauce is either warm or chilled.
    Ingredients:
    5 Golden Delicious apples, peeled, cored, and quartered
    5 Gravenstein or Fuji apples, peeled, cored, and quartered
    1¼ cups unfiltered apple juice
    2-3 tablespoons brandy or cognac
    3 tablespoons butter
    4 tablespoons sugar
    Scant 1 teaspoon ground cinnamon
    Splash of lemon juice
    Dash of salt to taste

    This recipe is great for kids who are on a gluten-free diet.
    Vegan, Gluten-Free and Dairy-Free
    Ingredients:
    1 bag gluten-free corn tortilla chips 1 bag GO Veggie! Vegan Mexican Cheese Shreds 1/3 cup fresh cilantro, finely chopped 1 ripe avocado, peeled, pitted and diced 10 cherry tomatoes, halved 1/2 cup fresh salsa 1/4 tsp. sea salt 1/4 tsp. pepper Directions:
    Preheat oven to 350 degrees F. Place corn tortillas in a large baking dish; top with remaining ingredients. Bake for 15 minutes or until cheese is completely melted. Remove from oven; serve warm. Enjoy!

    Celiac.com 11/05/2013 - Halloween is over, and this year we offered a fun alternative to the standard store-bought fare--marshmallow caramel puffs.
    They are fun and easy to make, and kids just love to help make them, and, of course, to eat them. They turned out great, so I thought I'd share them here for next year.
    This recipe makes a dozen marshmallows, but it's easy to scale accordingly.
    Ingredients:
    1 dozen regular marshmallows
    1 dozen Kraft caramels
    ¾ cup almonds, crushed
    6 ounces melted dark chocolate
    Directions:
    Place crushed almonds into a bowl.
    Melt caramels in a double-boiler.
    Dip marshmallows halfway into the melted caramel.
    Remove, and let the excess drip off, then dip in crushed almonds.

    If you love mangoes, and with frozen summertime treats, then these frozen mango lassi pops with hit the spot.
    Ingredients:
    8-10 fresh yellow Ataulfo mangos, peeled and seeded ⅓ cup fresh whole milk yogurt ⅓ cup fresh cream ¼ cup coconut milk ⅓ cup sugar, as desired pinch of kosher salt Directions:
    Special equipment: four 4-ounce ice-pop molds or six 3-ounce molds, 4 or 6 ice-pop sticks
    Cook the coconut milk, cream, sugar and a pinch of salt in a small saucepan over low heat, stirring occasionally, until the sugar is completely melted, about 5 minutes.
    Let cool completely at room temperature, at least 30 minutes.
    Put coconut mixture and mango pieces into a blender and blend well.
