    Dixie Pork Chops (Gluten-Free)

    Arrange in baking dish with potatoes on bottom:
    6 or 8 pork chops pan grilled
    4 to 6 large potatoes peeled and quartered

    Sauce - Mix together:
    1- medium green bell pepper chopped
    1- 14.5 ounce can crushed tomatoes
    1- 14.5 ounce can water
    1- 8 ounce can tomato sauce
    ½ teaspoon cayenne pepper
    ½ teaspoon garlic powder
    1 Tablespoon lemon juice
    2 Tablespoons Worcestershire sauce
    salt and pepper to taste.

    Pour over potatoes and chops and bake at 350F for 1 hour. Fantastic!

    2 large Idaho potatoes, peeled and sliced 1/8-inch thick
    2 large sweet potatoes, peeled and sliced 1/8-inch thick
    1 ½ cup coconut or Darifree milk

    Fall means apples. Go into the stores now, and you will find a good variety of delicious apples to choose from. Baked apples are one of the easiest, tastiest, gluten-free treats to make during the holidays. I prefer Granny Smiths or Pippins, as their tartness combines well with the sweetness of the filling, and they hold their shape well. But, I've had success with Golden Delicious and Jonathans. I recommend serving these delicious treats with a big helping of vanilla ice cream. Make as many apples as you have people to serve. Scale stuffing accordingly.

    The rub in this recipe is one of many variations on a classic Cajun rub and is also perfect for chicken, beef steaks, or even vegetables. You can mix it up by serving different fish; snapper and swordfish would also hold up really well. Serving fish with lemon not only cuts the intense flavor of the spices, but also gives the fish a refreshing bite.

    Ingredients:
    2 large onions, quartered 4 shallots, quartered 8 cloves garlic, peeled and chopped 2 lemons, quartered 2 oranges, quartered 6 stalks celery, quartered with leaves 4 tablespoons black pepper 4 tablespoons seasoned salt 2 fresh live lobsters or 4 (6 ounce) lobster tails ½ cup butter, melted Directions:
    Pour about 1 inch of water in the bottom of a large pot. Add all ingredients except lobster and butter. Bring to a boil.
    Add the salt and place a steamer insert inside the pot so that it is just above the water level. Put the lobster tails on the rack and cover the pot.
