    Any lemon bar I've eaten since then has been measured by the rather high bar of quality and memory, and many have failed that comparison. However, I recently learned how to make a gluten-free lemon bar that came pretty close.
    I think any good, light gluten-free flour would work for this recipe, which makes a delicious, sweet, tangy lemon bar.
    The lavender flowers add a fresh, aromatic twist. You can easily skip them, if you prefer a more traditional lemon bar. The bars taste great either way.

    Ingredients:
    1 pound cream cheese, 2 (8-ounce) blocks, softened ½ can solid-pack pumpkin (about 8 ounces) 3 whole eggs 1½ tablespoons potato flour 1 cup sugar ¾ teaspoon pumpkin pie spice ¾ teaspoon vanilla extract Almond Meal Crust:

    Ingredients
    3 8-ounce packages cream cheese 1¼ cup almond meal (or finely ground raw almonds) ⅓ cup butter 3 tablespoons sugar (for crust) 1 cup granulated sugar 3 tablespoons gluten-free flour or potato starch ¾ cup whole milk eggnog 2 eggs 2 tablespoons rum 1 teaspoon ground cinnamon 1 teaspoon ground nutmeg Directions:
