    Fresh Cucumber Tomato Salad with Mint (Gluten-Free)

    This crisp, refreshing cucumber salad is perfect for summer.

    Celiac.com 08/06/2021 - Fresh, cool cucumber, tomato, onion and mint dance with olive oil and vinegar to deliver this delicious, refreshing salad that's perfect for staying cool in hot weather.

    Ingredients:

    • 4-6 Persian cucumbers
    • 8-10 cherry or grape tomatoes
    • 1 teaspoon salt
    • ¼ cup chopped red onions
    • 2 tablespoons white wine vinegar
    • 2 tablespoons extra virgin olive oil
    • 1½ teaspoons sugar, to taste
    • ¼ teaspoon freshly ground black pepper
    • ¼ cup chopped fresh mint

    Directions:

    • Add cucumber, tomato, onion, vinegar and oil to a large ceramic, glass or plastic bowl.
    • Add salt, pepper, sugar, and mint.
    • Stir, tossing gently until well mixed.
    • Refrigerate for at least 1 hour.
    • Serve chilled.

    Scott Adams was diagnosed with celiac disease in 1994, and, due to the nearly total lack of information available at that time, was forced to become an expert on the disease in order to recover. In 1995 he launched the site that later became Celiac.com to help as many people as possible with celiac disease get diagnosed so they can begin to live happy, healthy gluten-free lives.  He is co-author of the book Cereal Killers, and founder and publisher of the (formerly paper) newsletter Journal of Gluten Sensitivity. In 1998 he founded The Gluten-Free Mall which he sold in 2014.     Ingredients:
    1 tablespoon olive oil 8-10 cups cut-up seedless watermelon (about 2 pounds) 3-4 Persian cucumbers, halved lengthwise and sliced (skin on) ¼ cup chopped fresh mint 2 tablespoons fresh lime juice ½ teaspoon kosher salt ¼ teaspoon fresh ground pepper, as desired Directions:
    In a medium bowl, toss the watermelon, cucumber, mint, lime juice, oil, salt, and pepper.
    Serve immediately.

Plus it helps them to understand issues such as cross-contamination, what does and doesn’t contain gluten, how to read labels, and how to adapt recipes to be gluten-free.
