    Gluten-free Honey Lavender Shortbread (Gluten-Free)

    Since I fell in love with the homemade lavender biscotti from my favorite coffee shop in San Francisco, I’ve been trying to incorporate this distant cousin of mint into my cooking. Lavender is easily found in specialty food stores or online, and a little goes a long way. This recipe for shortbread makes about 30 delectable cookies. It’s important to chill the dough; it will be firm and easier to work with.

    Ingredients:
    1½ cups almond meal flour, plus extra for dusting
    ¼ cup cornstarch
    2 tablespoons dried lavender flowers, chopped
    2 tablespoons honey
    ¼ cup sugar
    8 tablespoons butter, cut into 1-tablespoon pieces
    ½ teaspoon salt

    Directions:
    Preheat oven to 350° F.

    In a medium bowl, combine honey, sugar, and butter with a mixer or spoon.

    In a separate bowl, sift together flour, cornstarch, lavender and salt. Add to butter mixture and stir until you have soft dough.

    Transfer dough to a dusted cutting board, roll into a ball and wrap in plastic. Chill for 30 minutes.

    Roll out chilled dough about ¼-inch thick and score into rectangles. Bake on a greased cookie sheet for 15-20 minutes until golden brown. Cool to room temperature and serve.

    I wouldn't recommend using Gee.....cooked too fast.. they burned in 7 minutes.....will try again though...they smelled heavenly.

    Mix:
    1 egg, beaten
    ¼ cup canola oil
    1 4-oz jar strained baby fruit or 1 mashed banana
    1 teaspoon gluten-free vanilla
    In another bowl, mix:
    1 cup instant baby brown rice cereal (Beechnut or Earths Best, not Gerber)
    ¼ cup quinoa flour - (best bet, but OK with amaranth, garbanzo, or potato starch flour)

    Combine, then add:

    1-¾ cups gluten-free flour mix**
    ½ to ¾ teaspoon ginger
    ½ teaspoon cream of tartar
    1/8 teaspoon salt
    ½ teaspoon baking soda
    ½ cup butter or margarine (cold)
    1-½ teaspoon xanthan gum
    ½ cup brown sugar
    1/8 teaspoon cloves
    1 egg (cold)
    ¼ to 3/8 teaspoon cinnamon
    ½ cup gluten-free molasses
    Combine the rice flour, cream of tartar, baking soda, xanthan gum, cloves, cinnamon, ginger, and salt. Mix well. Cut in the butter or margarine until the mixture is in crumbs the size of peas.
    In a small bowl beat the sugar, egg, and molasses together. Add this mixture to the dry ingredients and mix until the dough pulls away from the sides. Form the dough into a flat ball shape and refrigerate for one hour.

    2¼ cup rice flour
    1 teaspoon cinnamon
    2 teaspoons gluten-free baking soda
    ¾ cup gluten-free shortening
    ¼ teaspoon salt
    1 cup brown sugar
    ½ teaspoon cloves
    1 egg

    ¼ cup molasses
    Sift together dry ingredients except sugar. Cream shortening with brown sugar, add egg, and molasses. Add dry ingredients and mix. Chill dough in refrigerator for 30 minutes. Roll into small balls, dip the top in white sugar, and flatten with fork on greased cookie sheet. Bake at 375F about 8 to 10 minutes.

    1 egg white
    ¼ teaspoon salt

    2/3 cup sifted gluten-free all purpose flour or Bette Hagmans 4 Flour Blend
    ½ teaspoon xanthan gum
    2 tablespoon melted gluten-free butter, cooled slightly
    ½ teaspoon gluten-free vanilla
    If too thin and runny, add another spoon of flour, or cocoa. Beat the eggs and salt in a small bowl with fork until well blended. Beat in the sugar and beat until sugar is incorporated and the egg has lightened in color, about 1 min. Add the flour and xanthan and stir slowly until all flour is moistened. Beat another 15 seconds to remove all lumps. Add melted butter and stir until well blended. Bake using pizzelle iron.
