    Grilled Pineapple (Gluten-Free)

    Celiac.com 07/15/2017 - Want to be a star at your next cookout? Try this easy trick for grilled pineapple. Watch as it disappears and the smiles become contagious.

    Directions:
    Place pineapple in a large plastic bag.

    Celiac.com Sponsor (A12):
    Add honey, butter, hot pepper sauce, and salt.

    Seal bag, and shake to coat evenly.

    Marinate for at least 30 minutes, but preferably overnight.
    Heat an outdoor grill for high heat, and lightly oil grate.
    Grill pineapple for 2 to 3 minutes per side, or until heated through and grill marks appear.

    Be sure to get a bite before they disappear!

    1 cup plain Yogurt

    1/3 cup Agave Nectar
    1 cup walnuts

    This is my absolute favorite way to prepare asparagus, and one that is sure to put a smile on the faces of your family or guests. The process is simple, and the result is totally delicious. Simply coat asparagus in olive oil, lemon juice, garlic, and salt and toss them, on a hot grill for a few minutes, and, violá, a side dish fit for a king!
    Ingredients:
    1 pound fresh asparagus spears, trimmed
    1 tablespoon olive oil
    1 clove garlic, minced
    1 teaspoon coarse kosher salt
    juice from 1/2 lemon
    Directions:
    Preheat grill to high heat.
    Wash and trim asparagus spears.
    Lightly coat asparagus spears with olive oil, lemon juice, garlic and salt. I do this in a compostable plastic bag that I can then discard, but a bowl or plate works okay, too.

    I find baby artichokes a little underrated; they’re easier to handle and usually cheaper. I tried these for the first time on the grill, but it’s just as easy to toss together and roast. I happened to have pistachios on hand the second time around and they turned out to be the secret star of this dish.
    Ingredients:
    9-10 baby artichokes, about 2 pounds
    1 broccoli head, cut into florets
    1 lemon, cut in half, plus 1 teaspoon zest
    ¼ cup shelled pistachio nuts
    2 cloves garlic, minced
    ¼ cup olive oil plus 1 teaspoon
    2 tablespoons balsamic vinegar
    ¼ cup parmesan cheese, freshly grated
    ½ teaspoon each salt and pepper
    Directions:
    Preheat oven to 400º F.

    Roasted Sunflower Fennel Crisps (Gluten-Free)
    This gluten-free recipe can be served with your favorite dip, or just eaten by itself!

    Gluten-Free and Vegan
    Serves 4
    Ingredients:
    4 bulbs fresh fennel 1/4 tsp. sea salt 1 clove garlic, minced 1/3 cup freshly squeezed orange juice 1/2 tsp. apple cider vinegar 1/4 tsp. orange zest
    1/3 cup sunflower seeds, finely ground Directions:
    Pre-heat oven to 350 degrees F. Slice fennel bulb lengthwise to create disk-like slices. Prepare a baking sheet with parchment paper.  Sprinkle with sea salt and minced garlic, then drizzle with fresh  juice and vinegar.  Top with orange zest and ground sunflower seeds.
    Bake for 30 minutes or until crispy.
