Hamburger/Lamb Patties with Lentil Soup (Gluten-Free)

Reviewed and edited by a celiac disease expert.

This recipe comes to us from Valda - ArtGirl in the Open Original Shared Link.

    Ingredients:
1 can of Amys Lentil-Vegetable Soup
1 pound (or more) ground meat - half hamburger, half lamb
    Salt
    Dried basil
One cup chopped carrots (about 3-4 carrots)
One cup of potatoes, peeled and cut in small pieces (about 2 med-sized potatoes)

    Celiac.com Sponsor (A12):
    Directions - Patties:
Mix together ground lamb and ground beef (50/50)
Into this mixture add some salt and dried basil (approx 1/8 tsp or to taste)
Shape into small patties (I like to make my flat ovals, about 2 long)
Fry patties until done. Drain on papertowels.

    Directions - Vegetables:
Cook the carrots a saucepan with water. Drain.
Cook the potatoes in another saucepan with water. Drain

Directions - After the meat and vegetables are cooked:
Pour the Amys lentil vegetable soup in a 10-12 frying pan.
    Stir in the carrots.
Place the cooked meat patties in a ring around the outer edge of the pan, settling them into the soup.
Make a well in the center of the mixture and place the cooked potatoes together in the center, stir slightly to coat the potatoes with the broth.
Heat covered on low until all is hot.

    Serve in the pan.

Serves 3-4. Increase meat and potatoes if you need more servings.

Scott Adams was diagnosed with celiac disease in 1994, and, due to the nearly total lack of information available at that time, was forced to become an expert on the disease in order to recover. In 1995 he launched the site that later became Celiac.com to help as many people as possible with celiac disease get diagnosed so they can begin to live happy, healthy gluten-free lives.  He is co-author of the book Cereal Killers, and founder and publisher of the (formerly paper) newsletter Journal of Gluten Sensitivity. In 1998 he founded The Gluten-Free Mall which he sold in 2014. Celiac.com does not sell any products, and is 100% advertiser supported.

    Ingredients:
2 racks of baby back ribs
1/3 cup of McCormick’s Grill Mates Barbeque
    1 bottle of gluten-free beer
    Gluten-free barbeque sauce
    Directions:
Remove the casing on the back side of ribs. Pour the bottle of beer in a large jelly roll pan. Add the ribs to the pan and sprinkle them with McCormick's. Cover tightly in foil and bake in the oven at 200F degrees for 4½ hours (up to 6 hours depending on size of ribs--we used small ones). Next, lightly coat the ribs with Gluten-Free Barbeque sauce and grill them on medium heat for 15 minutes. The ribs should fall off the bone and be very yummy!

I’m a big fan of just about any “one-pot” meal. A good one-pot meal is easy to make and brimming with flavor. The flavors in this simple dish come together seamlessly. The roasted vegetables and herbs infuse the flaky salmon. This recipe serves four, but can easily be adjusted to accommodate more or fewer people. Add this to your repertoire for quick entertaining or classic, at-home comfort.
    Ingredients:
4 6-8 ounce salmon fillets, skin removed
2 fennel bulbs, cut into ½-inch wedges
1 pound small pearl onions, peeled
    6 cloves garlic
    2 cups cherry tomatoes
    2 tablespoons olive oil
    2 teaspoons fresh lemon juice
3 sprigs each fresh thyme and rosemary
1 teaspoon each salt and pepper, plus more to taste
    Directions:
    Preheat oven to 400° F.
