    Jicama, Peach and Watermelon Salad with Lime and Chile (Gluten-Free)

    Celiac.com 08/18/2016 - If you're looking for a quick, easy, refreshing treat that makes the most of summer's bounty of fruit, look no further. This recipe blends fresh jicama, peaches, and watermelon with a dash of lime, and a splash of chili powder.

    Ingredients:

    • 2 cups fresh jicama, diced
    • 2 cups fresh watermelon, deseeded, diced
    • 2 cups fresh peaches, peeled, diced
    • 4 limes, juice
    • dash of chili powder

    Directions:
    Chop jicama, watermelon, and peaches into bite-sized pieces, drizzle with lime juice, and top with chile powder, as desired.

    This recipe comes to us from Judy Tolliver.
    The state of Minas Gerais is known throughout Brazil for its cuisine, and there are places in other parts of Brazil where one can buy pã de queijo and other mineiro specialties. Any mineiro cook can make pao de queijo, and there are endless recipes and methods for it. Minas Gerais is also known for its cheeses; the Wisconsin of Brazil, if you wish.
    Makes 2 dozen appetizer-sized balls.
    Preheat oven to 375°. Boil the following until white foam appears (on stove or in microwave):
    ½ cup vegetable oil
    1/3 cup water
    1/3 cup milk
    (1 tsp salt optional)
    Add this hot mixture to 2 cups tapioca starch. Mix well with wooden spoon
    and let rest for about 15 minutes. You will get white ball. Mix in 2 eggs

    5 Gluten-Free Ways with Tomatoes
    Celiac.com 02/13/2012 - Here are 5 quick n' easy ways to enjoy Tomatoes in meals, snacks and desserts.
    Escarole Salad with Cherry Tomatoes & Pistachios (1 cup pistachios, 2 sliced tomatoes, 2 Tbsp. flax oil, 1 Tbsp. balsamic vinegar, 1 segmented orange, 1 head escarole, leaves torn). Puree half the pistachios, oil and balsamic in a blender. Toss orange segments with sliced tomatoes, escerole and dressing; season. Top with remaining nuts.
    Tomato Garlic Oil (1/3 cup extra virgin olive oil, 2 finely chopped persimmons, 1 clove crushed garlic). In a small saucepan over low heat, cool oil, 1 cup grape tomatoes, halved and garlic for 5 minutes.  Remove from heat add sea salt; set aside to cool. Discard garlic. Refrigerate for up to 4 days.

    Ingredients:
    2 ripe avocados, peeled, pitted and diced 2 tsp. olive oil 2 cups fresh cherries, pitted and halved Juice of 1lemon 1/4 tsp. fresh lemon zest 1/4 tsp. sea salt 1/4 tsp. freshly ground black pepper 1/4 cup finely chopped fresh cilantro, plus more for garnish Instructions:
    Preheat grill to medium heat. In a medium bowl, gently toss cherries in olive oil. Place cherries into a large piece of tin foil and fold to seal foil at the top. Transfer cherries in foil to the heated grill; cook for 10-12 minutes or until tender. Meanwhile, in a medium bowl, mash avocados until it forms a chunky consistency. Remove cherries from grill; set aside...

    This recipe blends avocado, cucumber, mango and tomato with just the right amount of onion, cilantro and jalapeño to deliver a delightful zesty fruit salsa that is sure to disappear quickly.
    Ingredients:
