    Lemon Braised Artichokes (Gluten-Free)

    These lemon braised artichokes make a great side dish for nearly any entrée.

    Celiac.com 05/06/2023 - Looking for a refreshing and tangy side dish that will elevate your dinner table? These lemon braised artichokes are a great option. Their success comes from using the bright tang of fresh lemon to set off the natural flavors of artichokes. The result is a vibrant and delicious side dish that will flatter any entrée.

    Ingredients:

    • Bring ½ cup each water and white wine
    • 2 packages frozen artichoke hearts (about 9-ounces each)
    • 3 wide strips lemon zest
    • 2 tablespoons each lemon juice and olive oil

    Directions:
    Season ingredients with salt and pepper.

    Add everything to a large skillet.

    Bring to a boil and then reduce to a simmer.

    Cover and cook, stirring halfway through, until the artichokes are tender, about 10 minutes. 

    Uncover and add 2 minced garlic cloves and 2 tablespoons each olive oil and chopped parsley and mint. 

    Cook, stirring, until the garlic softens, 1 to 2 more minutes.

    Serve with your favorite entrée.
