    Lemon Pudding Recipe (Gluten-Free)

    Reviewed and edited by a celiac disease expert.

    After making too many gluten-free angel food cakes and being leftwith more egg yolks than I knew what to do with, I decided to make thislemon pudding.

    Lemon Pudding Parfait

    Celiac.com Sponsor (A12):
    12 egg yolks
    ¼ cup agave nectar
    ¼ cup lemon juice
    pinch celtic sea salt
    ½ cup heavy cream

    1. Place egg yolks, agave and salt in a medium sauce pan
    2. While heating over very low flame, whip with a hand mixer for 6-8 minutes, then whip in lemon juice
    3. Chill for a half an hour
    4. If pudding separates, whip with hand mixer for 1-2 minutes, until fluffy again
    5. Whip cream in a separate bowl
    6. Serve in small glasses, alternating layers of pudding and whipped cream
    7. Garnish with berries
    Serves 8

      Welcome to the forum, @robingfellow and @Mr-Collateral531, I also had to have my gallbladder removed in emergency surgery. The gallbladder uses lots of thiamine vitamin b1 to function.       Thanks for the reply ! I am asking because tomorow i have egd and nobody told me not to eat gluten-free oats… and i was scared that it could ruin my biopsy results…

      Yes, I would think that for the 10% of celiacs who can't tolerate oats it would cause villous atrophy just like gluten. No, it would not produce marsh 3b villous atrophy in a couple of days.       Thanks for the awnsers i understand there is maybe system reaction but do they create or cause villious atrophy? And igmf you it them for example a couple of days di they instantly induce marsh 3b?
